Bartending 101: How To Shake Cocktails

Shake It Like You Mean It

The majority of cocktail recipes call for the ingredients to be shaken using a cocktail shaker. It is by far the most used, enjoyable, and entertaining method for preparing mixed drinks and it's unbelievably simple.

Shaking is one of the basic bartending techniques and learning how to do it will significantly improve your drinks. With a little practice and by following a few tips, you will master it in no time.

What You Need for Shaking

Cocktail shakers come in two basic styles: the standard three-piece shaker and a 2-piece Boston shaker. Either can be used to create great drinks and which you choose will be a matter of personal preference.

The three-piece shakers have a built-in strainer so it is the only tool you need when shaking drinks. If, however, you prefer to use a Boston shaker, you will need a separate strainer.

How to Shake a Cocktail

Shaking a mixed drink is very easy. It should take just a minute or two from the time you begin pouring the ingredients to the time you strain the drink.

In most cases, you will follow these six steps to shake a cocktail:

  1. Pour the ingredients into a cocktail shaker or mixing glass (if using a Boston shaker).

  1. Fill the shaker with ice.
  2. Secure the lid or Boston shaker tin.
  3. Hold the shaker with both hands (one on each piece) and shake vigorously over your shoulder.
  4. Shake for a slow count of ten or until the outside of the shaker frosts up.
  5. Strain your cocktail into a chilled glass. Remember to strain over fresh ice when preparing drinks served on the rocks.

Tips for Shaking Cocktails

While the basic way to shake a cocktail is very easy, there are a few tips that you will find useful to make sure everything goes smoothly and you get consistent well-mixed drinks.

  • Fill a cocktail shaker halfway with ice first. This will chill the shaker and cool the liquids as you add them. If you're using a smaller shaker or making more than one drink at a time, use less ice to make more room for the ingredients.
  • Or, use the mixing glass pour. When using a Boston shaker, pour the ingredients into the mixing glass before adding ice. Many professional bartenders use this technique when free pouring because it gives them a visual as to how much liquid is being poured.
  • Don't overfill the shaker. Give the ingredients plenty of room to move around. This also helps to prevent spills while shaking. If you're using a small shaker, mix one drink at a time. The average-sized shaker can handle two or three drinks at once depending on the volume.
  • Shake drinks longer and harder. For cocktails that have many ingredients or ingredients that don't mix well such as eggs or cream, shake the drinks for at least 30 seconds to ensure a proper mix. Egg cocktails are often best with a dry shake, so hold the ice and give the ingredients an initial shake. Then add ice and shake as normal.

  • Look for the frost. The majority of the time, you are done shaking when the cocktail shaker becomes frosty on the outside. This occurs most often with stainless steel shakers and may not appear on those made of other materials.
  • Shake to a rhythm. Hum a tune and shake to a beat. Many bartenders enjoy a good Caribbean drum beat or will shake to the music in the bar. Have fun with it.
  • Shake it like you mean it.Shaking a cocktail is not a gentle thing and too many young bartenders make a weak attempt at it. Give the movement some force and power and enjoy the exercise. If you do it properly and shake often, your arms should be nice and fit.
  • Have a firm grip. Hold both pieces of any cocktail shaker firmly to ensure they stay together while you are shaking. When using a three-piece shaker, place a finger on top of the lid to hold that in place as well. A cocktail on the floor is a sad thing, so keep your shaker in one piece.
  • Shake over your shoulder. Shake over one of your shoulders (whichever is natural) just in case the shaker does come apart. Your backside may get wet, but your guests will not. This also helps add force to the shake.

Why Shaking is Necessary

Shaking a drink is not done simply for the fun of it (though it is fun), there are very good reasons why most cocktails are shaken.

The goal of shaking is to:

  • Thoroughly mix the drink's ingredients.
  • Give the drink a good chill.
  • Add enough dilution to knock the strength of the drink down so it is more pleasant.

Some drinkers may argue against this last point because they want a powerful drink. If that weren't the case, many would put down the liquor and choose beer or wine instead, right? Yet, it's important to look at the alcohol content of cocktails and how many drinks you would like to enjoy on any given night.

When we're mixing drinks that are almost entirely made of alcohol (like the majority of martinis), they can easily be in the 20-30% ABV (40-60 proof) range. That is after shaking with ice. It is a myth that dilution weakens a cocktail to the point where it's equivalent to wine or even as mild as a mixed drink like the Rum & Coke.

Also, is your goal to simply get drunk or to enjoy a few good drinks with friends? It is a fact that many of the most potent cocktails taste better with a little dilution. This is because water opens up the flavors and tames the alcohol to a point where it's palatable and more enjoyable.

If you want a drink that gives you a shock, stick to shots. If you want a drink to experience, use your shaker.

    London-based designer Aaron Probyn discovered his passion for furniture making when as a young man he worked as a carpenter. However, it was while buying and selling midcentury lighting and furniture at age 20 that Probyn realized he had an emotional attachment to design, form and materials. After earning a degree in product and furniture design from Kingston University in London, Probyn explored home design in the retail world before launching his own business.

    Today, he designs and creates from his bright, airy 1930s industrial studio. Overlooking London’s rooftops and neighboring reservoirs, the space has a dedicated workshop that allows him to be spontaneous in his design process. With a keen eye for proportion and detail, Probyn describes his aesthetic as material-driven and softly minimalist in form: “I believe there is something very primitive about design. As human beings, we feel the need to make objects that enrich our lives physically and emotionally. I have a very physical approach to design, and I enjoy playing around with new materials and finding new processes.”

    What you need to know.

    We will accept returns and exchanges of non-furniture items if:

    • Non-furniture items are returned within 90 days of customer receipt.
    • A valid proof of purchase is provided (see below).
    • Non-furniture items are returned in good condition—unused and unwashed.

    If you discover an item has a manufacturer’s defect or was damaged during transit, we will accept the item for return or exchange with proof of purchase. Without proof of purchase, the item can be exchanged only for the same item. A valid photo ID is required.

    We are unable to accept any items for return or exchange without proof of purchase. Items purchased as final sale cannot be returned, exchanged or repaired.

    Items must be returned to the store brand where the purchase originated or by mail (if the item was ordered online or by phone and received by mail). Purchases made outside the U.S. may only be returned to the purchase location.

    Broken Shaker Is L.A.'s New Cocktail Oasis

    It's the anti-rooftop bar.

    Broken Shaker is a rooftop bar that will likely become one of downtown L.A.'s buzziest spots. But in many ways, this cocktail destination atop the Freehand L.A. hotel is the anti-rooftop bar.

    "We're definitely not going to run it like a nightclub," says Bar Lab's Elad Zvi, who opened Broken Shaker with partner Gabe Orta last Friday. "I can promise you that. We're not cherry-picking at the door. We're not going to have a guestlist. We're not going to have a velvet rope."

    There will no doubt be capacity issues on busy nights at a spot that only holds about 250 people. But beyond that, this is a come-as-you-are place with fantastic drinks in a transporting and relaxed setting.

    Here are five things you should know about Broken Shaker.

    The Drinks Reflect L.A.'s Produce and Diversity

    Broken Shaker was born as a Miami pop-up. In Miami, Zvi and Orta grow their own herbs for cocktails. In L.A., they can just visit bountiful farmers markets like the one in Santa Monica on Wednesdays and the one in Hollywood on Sundays.

    "Every day, we're inspired by L.A.," Orta says. "We're always thinking about the markets and also where we like to eat."

    So bar director Christine Wiseman merges tropical-drink fantasies with all kinds of L.A. flavors.

    "You can really taste the mole in this," Wiseman says of her Mrs. Roper cocktail, which weaves mole in with two kinds of rum.

    Wiseman loves Little Tokyo, so her O-Fish-Ally Open cocktail featuring gin and organic miso is topped with a "glitter nori nest" that adds umami. Her showstopping Shell Beach Caipirinha includes a melon Szechuan gomme syrup.

    Wiseman's multicultural influences add depth to a collection of refreshing, balanced drinks. Many are nicely sweet without being overly sugary. The drink vessels, including a plastic pineapple, are on point. The garnishes, including a pipe-cleaner pink flamingo, are equally impressive.

    Mismatched furniture. A collection of art (including a mural from L.A.'s Luke Pelletier) that doesn't feel like it belongs in the same space. Various found objects from flea markets around the L.A area, including Long Beach and the Rose Bowl in Pasadena. Assorted plants that could be part of your most eccentric uncle's home garden. You'll find all of it at Broken Shaker.

    Zvi and Orta, with design team Roman and Williams, purposely created a new space that's rough around the edges.

    "We wanted to fuck it up a little," Orta says.

    "We wanted something a little more mom-and-pop looking," says Zvi, who notes that you'll see Mexican, African and lots of Californian elements as you look around. "It's kind of all banged up in a cool way."

    Adding to the boho-chic vibe are DJs with playlists heavy on reggae, funk and soul. The overall result is something that feels a world away from shiny rooftop bars where entitled customers buy bottles and stare at their phones while a Calvin Harris banger blasts on the speakers. Broken Shaker takes you to an entirely different time and place.

    The Food Is Pure L.A. Drinking Food

    Chef Alex Chang, who cooks Israeli food downstairs at The Exchange, is Mexican-Chinese. His version of L.A. drinking food at Broken Shaker celebrates his heritage.

    He's got guacamole alongside peanut salsa (not unlike what Orta recently tried at Mexico City's Pujol, where Chang once worked). There are crispy shrimp tacos inspired by Mariscos Jalisco, a stellar L.A. food truck Orta and Zvi adore. Chang isn't trying to recreate those tacos as much as he's riffing on them.

    On the Asian side of things, Chang is making chicken yakitori with Chinese flavors. He's serving egg rolls with fillings that include parsley and celery scraps from The Exchange. You could pair those with Wiseman's Trash-Tini, a martini that features kitchen scraps like repurposed, then charred onions. This is a bar that loves produce and uses as much of it as possible.

    The rooftop is also home to Freehand L.A.'s pool, so hotel guests are welcome to bring their kids for a burger and a swim. Wiseman is working on non-alcoholic concoctions that might appeal to underage guests.

    "Everyone is welcome," Zvi says. "Little kids, older people, cool people, regular people. We don't give a shit. As long as you have the right vibe, you're welcome."

    Having the right vibe in this case just means not being a jerk.
