If you’re off to the park with some friends for a picnic on one of those lazy, crazy days of summer, make some room in your hamper for a set of glasses and shaker. If you've never enjoyed a Tom Collins on a sunny back patio, you simply haven't lived.

A fabulous drink is the quickest way to get in the spirit. Whether guests prefer gin or rum, these simple, time-tested cocktails are sure to please.

Our very own "entertainologist" Lulu Powers loves serving up signature "sneekys" at her backyard bar. This version uses fresh greens, so "it looks healthy, but it's soooo delicious."

This party punch mixes up #millennialpink but tastes way better than a fad. Combining rosé with Sauvignon Blanc and brandy really gets the good times rolling.

The world seems a-okay with a fruity, fizzy concoction in hand. What to-do list?

This one's so easy, you'll be shaking 'em up until Labor Day. Just combine vodka with grapefruit juice and salt the rim. Simple enough!

It's probably those signature copper mugs, but gingery Moscow Mules always cool down sweltering summer days. Add fresh peaches and mint for that "ahhhh" moment.

Another Lulu tip? Freeze layers of coffee, half-and-half and chocolate milk in an ice mold. Then pour chilled java and a splash of Kahlúa or Baileys on top of the mocha cubes.

This is a classic summer drink, the cocktail equivalent of seersucker or a beach hat. (It also is the reason why a "collins glass" has its name.) Sweet and tart, the Tom Collins combines gin, lemon juice, seltzer and sugar.

Tequila-soaked memories of college aside, the margarita is festive and under-appreciated. Frozen versions evoke the feeling of tourist traps and mid-life crises, but a well-made margarita on the rocks is deliciously bracing. You know what's needed: Lime, tequila, triple sec (or Cointreau), salt.

Modern slushy sugarfests do not compare to the refreshing simplicity of a classic daiquiri, which was the drink of choice of Ernest Hemingway. The easiest recipe is two parts white rum to one part each lime juice and sugar syrup, shaken with ice and poured into a martini or cocktail glass. The Hemingway daiquiri adds grapefruit juice and maraschino liqueur.

Similar to the daiquiri, a gimlet is flavored with lime juice and simple syrup. Yet it differs by using gin instead of rum (up to 2 1/2 ounces of gin to 1/2 ounce each of lime juice and simple syrup). This potent cocktail is perfect for those who want a quenching drink that isn't too sweet.

As welcome at a Sunday brunch as a gossipy anecdote, this classic is made up a few basics: Spike tomato juice with vodka, along with a few dashes of Worcestershire and hot sauce, then garnish with a celery stalk.

Best accessorized with a 60s-inspired floral dress and witty barbs, a Mai Tai is a party in liquid form. It presents an opportunity to indulge in orgeat syrup, which tastes of almonds and a hint of rosewater. The Glamorous Housewife found an authentic vintage recipe, which also requires light and dark rum, curacao and lime.

It's a truth potion in cocktail form. Mint Juleps pack a punch, but there really is nothing better on a hot day. They require bourbon, simple syrup, crushed ice and, above all, fresh mint. (A julep cup is also a must.)

This mint julep cousin just has a different accent. This drink swaps out the bourbon in favor of rum. Good ingredients are key: Fresh mint, sugar and a smooth rum. Do not go anywhere near a premade mix, which has more in common with the scent of cleaning products than a good cocktail.

Whiskey adapts to summer heat with the help of sour mix, a blend of lemon juice and sugar. This recipe goes for Meyer lemons, which are sweeter than typical varieties.

Sweeten a tart mojito with muddled blackberries and you'll have a pretty pink drink.

Just like a gimlet, this Maine-born elixir brings gin and lime juice together, only with the infused flavor of fresh blueberries.

Juicy peaches, fresh ginger and soda taste heavenly as a mocktail but add a splash of rum to kick this refresher up a notch.

Cherry-lime is a classic combo, but a dose of honey takes this tart daiquiri into sweet territory.

Stir up your own personal vacation with a tropical treat that combines passionfruit juice with light and dark rum.

Before or after the Kentucky Derby, try this spicy take on the Bluegrass State's signature cocktail.

Mix up brunch with a bubbly and fruity cocktail you'll want to sip all afternoon. Try it now and you'll be tempted to make the matching dessert later on.

Imagine a margarita, only with an entire mashed pineapple and a healthy kick of jalapeño. So it's really nothing like your average marg after all.

1. Raspberry Ripple Sangria by Josh Tepperberg, Chef and Founder of Dr. Marinade Inc.

• 1 bottle Ice Cream Cellars Raspberry Ripple red wine • 1 pint fresh raspberries • 1Ž2 pint fresh blackberries • 1Ž2 pint fresh blueberries • Juice from 1Ž2 an orange • 1 bundle fresh mint

• Mix the wine, berries and orange juice in a pitcher, cover and refrigerate. • Before serving, add ice to the pitcher or individual glasses, garnish with a slice of orange and a sprig of mint.

2. Strawberry Ginger Margarita at Thistle Hill Tavern

• Strawberry Ginger Syrup: • 2 medium sized pieces of ginger • y pint strawberries • 2 y cups water • 2 cups granulated sugar

• 2 ounces Sauza gold tequila • 1 ounce triple sec • y ounce fresh lemon juice • y ounce fresh lime juice • ¾ ounce strawberry ginger syrup

Strawberry Ginger Syrup:

• Wash and remove stems from strawberries. • Peel and cut ginger into smaller chucks. • Puree strawberries and ginger in a blender with 1/2 cup of water until completely smooth. • Place strawberry ginger mixture in a saucepan with remaining 2 cups of water and granulated sugar. • Bring mixture to a boil, stirring frequently so it does not burn or stick to the pan. Let mixture simmer for 10 minutes then turn off. • Let the syrup cool down to room temperature. Refrigerate overnight. • Strain the mixture through a fine mesh strainer.

• Place all ingredients in a y pint glass. Shake and return to a y pint glass • Garnish with lime with and half a strawberry crusted with kosher salt.

3. Stevie Nicks Cocktail at Barmini

• 1.5oz Bombay • 1oz Rhubarb puree, • 3/4oz lemon juice • 1oz goat whey

• Shake all ingredients vigorously with plenty ice, strain into a coupe glass, garnish with dehydrated rhubarb flakes

4. LIV Basil Pepper Gimlet at South Edison

• 6 grinds of Freshly Ground Black Pepper • Fresh Basil • 1 oz Freshly Squeezed Lime Juice • 1 1/2 oz Vodka or Gin • Served in a Rocks Glass

• Muddle Fresh Basil • Add Ice • Add Vodka/Gin • Add Lime Juice • Grind Pepper over mixture. • Shake Vigorously until mixture is good and cold. • Strain over fresh ice. • Garnish with a sprig of fresh basil and a grind of black pepper.

5. Mai Tai at Nick & Toni's

• 1oz Dilpomatico Blanco • 1oz Rhum Clement VSOP • .5oz Pierre Ferrand Dry Curacoa • 1oz orgeat • 1oz fresh squeezed lime juice • Shake vigourously amp strain over new ice. Garnish with sugar cane amp lime wheel.

For Orgeat: • 2 lbs blanched almonds • 96oz water • 2 lbs demerarra sugar • 2 lbs granulated sugar • 1oz orange blossom water • 8oz Boyd amp Blair High Proof Potato Vodka • 8oz Diplomatico Reserva Exclusiva Rum

•Toast almonds for 10-15 min in 400 degree oven •Grind almonds in a blender/food processor in batches with small amounts of the water. •Add remainder of water amp let sit in sealed container overnight @ room temp •Double strain almond mixture, add sugar amp heat on stove top until dissolved do not boil. •Add spirits amp orange blossom water. Store in refrigerator. •Orgeat separates, so shake before use. Keeps for at least a month.

6. The Hinoki Swizzle at Hinoki & the Bird

• 1 oz Amontillado Sherry • 0.5 oz St. Germain • 1 oz Fresh green apple juice • 2 oz Champagne

• Stir all ingredients together and top with about 2 oz of champagne. Fill with crushed ice and garnish with a lemon wedge and apple slice.

7. Graycliff Champagne Cocktail at The Graycliff Hotel

Makes 8 ? 2 ounces apple brandy, such as Calvados ? 1?2 ounce orange liqueur, such as Grand Marnier ? 1?2 ounce black raspberry liqueur, such as Chambord ? 1 tablespoon plus 2 teaspoons Simple Syrup ? 3 tablespoons chopped apple ? 2 dashes Angostura bitters ? 2 (750 ml) bottles dry Champagne ? 8 maraschino cherries, for garnish ? 8 orange wedges, for garnish ? 8 lime twists, for garnish

? In a glass measuring cup, combine brandy, orange liqueur, black raspberry liqueur, simple syrup, apple, and bitters. Refrigerate for at least 30 minutes. ? Strain brandy mixture, discarding solids. Pour 1 tablespoon plus 1 teaspoon strained liquid into each of 8 champagne flutes. Top with champagne. Garnish each glass with a cherry, orange wedge, and a lime twist. Serve immediately.

8. Rosé Crush Cocktail at Grace Bay Club

• 2 Scoops of Crushed Ice • 2 Shots of Rose Wine (Minuty is used at Stix on Grace Bay but other Roses will also work) • 1 Shot of Orange Juice • 1 Shot of Cranberry Juice or Raspberry Juice • Fresh Cranberries, Fresh Raspberries and Fresh Mint to Garnish

•Add crushed ice to a martini glass. •Pour 2 shots of Rose and 1 shot each of orange and cranberry or raspberry juice in a mixer and shake. •Pour over ice and garnish with cranberries, raspberries and a sprig of mint

9. Bob Marley Cocktail at Beaches Resorts

• 1Ž2 oz. Grenadine • 1Ž2 oz. Creme de Banana • 1Ž2 oz. Creme de Menthe • 1Ž2 oz. Appleton Estatei V/X Jamaican rum • Splash of 151

• Pour grenadine, creme de banana, creme de menthe and Appleton Estatei V/X Jamaican rum. Put a small layer of 151 on the top and ignite.

10. Philips Head Cocktail at The Arlington Club

• One part Pink Grapefruit Liqueur • 2 Parts Orange Juice • Prosecco

• Combine first two ingredients in a Champagne flute garnished with a Lime Wheel • Top with Prosecco

11. Moscato Crush at Ruschmeyer's

• 2 oz waqar • 6-8 seedless grapes • .75 oz lemon juice • .75 oz simple syrup

12. Endless Summer Cocktail at Surf Lodge

• Muddle 6 red seedless grapes • 3Ž4 oz fresh lemon juice • 1 oz simple syrup • 1 1Ž2 oz Absolute Vodka • 1 oz Chardonnay (land mark) • Served in a highball glass • Garnish: 1 red seedless grape

13. Blueberry Lemonade at The Castle Hill Inn

• Stolichnaya Blueberry – 1.5 oz. • Fresh whole blueberries - 1 oz. muddled • Juice from one lemon wedge • St. Germain - .25 oz. • Lemonade to fill • Garnish with a lemon wedge

14. A Midsummer Night's Dream at Harlow Restaurant

• Created by Chef Danny Ye of Harlow restaurant, NYC • 2 oz Plymouth Gin • 4 dashes of Yuzu juice • 3/4 oz Simple Syrup • 6 sprigs of tarragon (leave leafs on stalks) • 1 lime, cut into 1/8 slices

• Build in a shaker, muddle limes and add tarragon and remaining ingredients. Shake like crazy! Double strain over pellet ice and garnish with a lime wheel and sprig of tarragon.

15. Acai Caipirinha at Navy Beach

• Leblon Cachaça • Lime and Sugar • Cedilla Acai Liquor

• In a mixing glass, muddle the limes and sugar • Add 1/2 an oz. of Cedilla Acai Liquor and 2 oz. of Leblon Cachaça • Fill with ice, shake well and pour all into a rocks glass • Garnish with a lime wedge.

16. Watermelon-Plata Tequila Cocktail at Mesa Grill, Bar Americain, Bobby’s Burger Palace

• u cup sugar • 8 cups watermelon, chunks, seeds removed • Juice of 2 limes • 1 y cups fresh blueberries, plus more for garnish • y cup lightly packed fresh mint leaves, plus more for garnish • 1 cup silver tequila • Crushed ice

• Combine u cup water with the sugar in a small saucepan, bring to a boil, and cook until the sugar is dissolved, about 2 minutes. Pour the syrup into a bowl, cover, and refrigerate until cold, at least 1 hour or overnight. • Puree the watermelon in a food processor until smooth. Strain the juice into a bowl and discard the solids. • Put the syrup, lime juice, blueberries, and mint in a pitcher and muddle until the berries are slightly crushed. Add the tequila and watermelon juice and stir to combine. Refrigerate until cold, at least 1 hour. • Serve over crushed ice, garnished with mint leaves and blueberries.

20 Great Cocktails for Summer

Whatever your drink of choice, here's how to stay cool all summer.

With summer halfway gone, it's time to finally switch up your home cocktail menu to something more seasonally appropriate. After all, you don't want a drink that's best served next to a roaring fireplace. Instead, you need a cocktail that's cool and refreshing, a drink that transports you to a shaded veranda overlooking the ocean. Sound nice, right? Whether it's a classic margarita, a syrupy sweet mojito, or something much more ambitious, here are 20 cocktail recipes that are perfect for summer.

1.5 oz. fresh pineapple juice

.5 oz. fresh lime juice

.5 oz. simple syrup

dehydrated pineapple (optional)

Combine all ingredients, then shake and strain into a rocks glass over fresh ice. Garnish with a pinch of salt and dehydrated pineapple.

Place 5 to 6 mint leaves in the bottom of a pre-chilled highball glass or pewter cup. Add sugar and muddle slightly. Pack the glass with crushed or finely cracked ice. Add the bourbon and stir briskly until the glass frosts. Add more ice and stir again before serving. Garnish with a mint leaf.

Pour ingredients over ice into a cocktail shaker. Stir (with your finger) and strain into a rocks glass with ice. Garnish with an orange twist.

1 oz. fresh grapefruit juice

.5 oz. fresh lime juice

.5 oz. honey syrup

Combine all ingredients, then shake and strain into a rocks glass over fresh ice. Top with club soda, and serve with an umbrella/paper straw.

1 oz. Samogon TM*

1 oz. lime juice, freshly squeezed

Combine in a cocktail shaker and stir. Strain into a highball glass over crushed ice. Garnish with mint or rosemary.

6 sour cherries

.5 oz. fresh lime juice

In a cocktail shaker, combine the cherries and the sugar cube. Muddle until the sugar is broken down. Add the lime juice and gin, and then shake. Strain into a Collins glass filled with ice. Top with a splash of ginger ale and garnish with a lime wedge.

2 oz. silver tequila

1 oz. lime juice

Chill a cocktail glass and then rub it's rim with lime juice and dip in coarse salt. Combine the tequila, Cointreau, and lime juice together in a cocktail shaker and shake. Strain into the glass over ice and garnish with a lime wedge.

1.5 oz. hibiscus syrup

.75 oz. sweet vermouth

1 fresh lemon wedge

3 dashes orange bitters

Muddle mint and fresh lemon wedge, then add all other liquid ingredients. Dry shake. Add ice, hard shake. Rinse a cocktail martini coupe with orange bitters. Double strain into the cocktail martini coupe. Garnish with mint leaf.

.5 oz. lime juice

.75 oz. pineapple juice

.5 oz. ginger syrup

Combine the ingredients into a cocktail shaker and stir. Strain into a rocks glass with ice. Garnish with a splash of savory spiced rum.

1 oz. freshly squeezed lime juice

Combine ingredients into a cocktail shaker. Shake and strain over fresh ice in a rocks glass. Garnish with a lime wheel and a Luxardo cherry.

.5 oz. Grade B maple syrup

Add all ingredients to an ice-filled mixing glass and stir well. Strain and pour into a rocks glass. Garnish with lemon and orange zest.

1 oz. habanero nectar

3 oz. grapefruit soda

4 cubes ruby red grapefruit

Muddle the grapefruit cubes in a highball glass. Add the rest of the ingredients and crushed ice, and then top with a splash of grapefruit soda.

Add all ingredients into an ice-filled mixing glass and stir well. Strain and pour into a rocks glass. Garnish with an orange zest.

2 tbsp simple syrup

2 tbsp lime juice

Muddle two raspberries in the bottom of a highball glass. Add the rest of the ingredients together with ice. Garnish with a lime slice and more raspberries.

1 dash Prosecco

Combine the vodka and elderflower into a cocktail shaker, shake, and then strain into a chilled martini glass. Top it with a splash of Prosecco and garnish with fresh rosemary.

.5 oz. fresh squeezed lime juice

1 tsp super fine sugar

In a Collins glass, muddle the lime juice with 1/2 to 1 tsp of sugar. Add the mint leaves and mash against the side of the glass. Fill glass 2/3 full with cracked ice and pour in the rum. Squeeze in a lime and then throw in the squeezed-out lime shell. Top off with club soda.

.75 oz. fresh lemon juice

Coat the rim of a cocktail glass with sugar. Add the rest of the ingredients into a cocktail shaker with ice and stir. Strain into the cocktail glass and garnish with an orange peel.

3 oz. pineapple juice

1 oz. coconut cream

Combine the ingredients in a blender and blend on high with a cup of crushed ice. Pour into a Collins glass and garnish with a cherry, an orange slice, a pineapple slice, or all of the above.

2 cups strawberries

1/2 cup fresh lemon juice

12 basil leaves

Place strawberries into blender and add 2 tbsp of sugar. Add about 1/4 of a cup of water and pulse until pureed. In a medium saucepan over a medium-high heat, add the puree and 1 3/4 cup of water. Heat until mixture begins to boil. Allow to cool and then strain through a sieve.

In a large pitcher, combine the strawberry syrup, bourbon, 1 cup of water, lemon juice, basil leaves, and a splash of bitters. Stir and then pour into eight glasses with ice. Garnish each with a basil sprig.

Summer Cocktails

While we’ll never turn a perfect dry martini away, when warm summer nights roll in, switching it up feels kind of essential. We turned to our very talented bartender friend, Forrest Hudes (who also happens to be a woodworker and musician, naturally) for some ideas on reinventing classics. He spent the day with us at Elysian, a beautiful restaurant and event space tucked away on Los Angeles’ east side, giving us lessons in beet syrup, rose-infused vodka, and the delights of a subtle spin on a classic Old Fashioned. Below, five of his favorites to see us all through summer.

Jitterbug Perfume

“This drink comes from the millennia-long journey undergone in Tom Robbins’ novel of the same name to find the perfect perfume recipe. Along with lemon and jasmine, the secret ingredient turns out to be beets. The syrup takes some time and care to make, but at the end you have a rich crimson syrup and some sugar boiled beets that are great for a garnish or on top of a dessert.”

  • Dorian Gray

    “This surprising-looking drink comes from Jo Leon Guerrero of Huckleberry Bar in Brooklyn. We worked there together and I brought this recipe with me to the West Coast where it has been a crowd pleaser many times. It may not offer you eternal youth, but like the fictional Dorian Gray, Basil will be your best friend. Try infusing your tequila with black pepper for a few days for a twist with a kick.”

    “A floral twist on a Sidecar. Infusions are a great and amazingly simple way to impress people and add a lot of flavor to a drink. Dried rose petals will make a great infusion, but if you have fresh roses in the garden and no one to give them to an even more delicate flavor will be imparted. The color of this drink, especially contrasted with a fresh mint leaf garnish, is a real eye catcher. Light and refreshing, it will still leave you a little rosey if you aren’t careful.”

    “It is always good to have a few Old Fashioned variations up your sleeve. In an environment of basically three ingredients, little changes can make a big impact. The marriage of the yuzu and lavender makes for something citrus-y, floral, and delicious—it also makes this one slightly lighter. Use demerara syrup, not simple or a sugar cube. It is no harder to make and will add a very noticeable depth of flavor to your drink. White sugar really doesn’t belong anywhere near an Old Fashioned. This recipe features two Los Angeles companies, Miracle Mile Bitters Co. and Greenbar Craft Distillery.”

  • “As much as I love fancy ingredients, infusions, syrups, bitters, etc., sometimes it is best to get back to basics. For the no-nonsense drinker, there is The Hank. Named after my father, who has one every night, this was the first cocktail recipe I ever learned. A decent reposado tequila, fresh squeezed lime and orange juice, and just the right proportions will make this drink delicious. A great option for those no sugar added types, or after a long night of mixing complicated drinks.”
