Skinny Girl Bethenny Frankel lands $4.2M SoHo pad after exhaustive apartment search
Bethenny Frankel has finally landed new digs
Another skinny girl is moving to SoHo.
“The Real Housewives of New York City” star Bethenny Frankel’s exhaustive apartment search — which spanned Hudson Square, Tribeca and SoHo — has finally concluded, she revealed on this week’s episode of Bravo’s reality show.
Frankel, whose business empire includes Skinny Girl cocktails, nabbed a two-bedroom, two-bathroom pad at 22 Mercer St. in SoHo for $4.2 million last year and is now in the midst of renovating it before she and daughter Bryn move in, the Daily News has learned.
The property, at 22 Mercer St., has just 16 apartments
The apartment, which had been on the market for four months, has a sunken living room, soaring 14-foot ceilings, double mahogany framed arched windows, plank walnut flooring, wine storage and a large wood burning fireplace.
The stunning landmark building has just 16 units.
Listing broker Sabrina Saltiel of Douglas Elliman didn’t immediately respond to a request for comment.
Frankel — who split from hubby Jason Hoppy in 2012 but is still in the middle of a messy divorce — had long been on the hunt for a permanent home since Hoppy refused to move out of the $5 million pad they shared in Beyoncé’s building at 195 Hudson St. in Tribeca. Frankel owns a house in the Hamptons but she and her daughter had been hotel hopping when they were in the city.
“I’m the richest homeless person in Manhattan right now,” Frankel, 44, said on the show.
Frankel appears to still be hopping mad over Hoppy’s refusal to leave their former love nest.
“The fact that I live in different hotels, corporate apartments, I’m totally without a home for over two years and he lives in the apartment that I worked my whole life to buy — it doesn’t even make any sense,” she tells broker and “Million Dollar Listing New York” star Fredrik Eklund on “RHONY.”
Frankel was seen working with designer Aaron Kirsten to make changes to her new pad on the episode.

How to Make a SkinnyGirl Margarita. When summer is approaching and you're out for a night on the town or hosting a party--it never hurts to watch your waistline while you're drinking. Here's a quick and easy recipe for the SkinnyGirl (or, guys, you can drink it, too!) Margarita. It is skinny because most margarita recipes call for sweet and sour or margarita mix, both of which contain a large amount of sugar.
Make a Skinny Girl on the rocks by adding ice to a rocks glass, add 2 oz. (a two-count) of white tequila, the juice of four lime wedges and a splash of Triple Sec, Grand Marnier or Cointreau. It's that easy!
If you're ordering a Skinny Girl at a bar, you can have it on the rocks, but replace the Triple Sec, Grand Marnier or Cointreau with a splash of frozen margarita mix. You get the same great flavor and a little bit of a different texture.

Baked Spaghetti Squash Casserole
Happy (almost) Friday y’all!
Ok so I am absolutely loving spaghetti squash right now. It really is one of the most versatile vegetables to cook with and is the perfect substitute for pasta! You may be thinking “yeah right,” but it’s true. Hey I love pasta as much as the next person, but if I can find a healthier swap
You all are going to seriously LOVE this baked spaghetti squash casserole with meat sauce! Are you a vegetarian or not a fan of beef? Leave it out because this homemade marinara is absolutely delicious all on its own. Confession: I literally couldn’t stop shoving heaping spoonfuls straight to my face “taste testing” this meat sauce, it was just THAT good and when layered with spaghetti squash, cheese and topped with fresh basil this lightened-up dish makes the perfect dinner for all those hungry men, or kiddos, in your life!
OH and it’s a great way to sneak in those veggies!
This was a huge hit in our house and made a ton of great leftovers for lunches the next day. It was also super easy to throw together too! You just need to give yourself enough time to bake the spaghetti squash before shredding which takes about 45 minutes. What I like to do is prep this a day or two before (I usually do this on Sundays – you know I love my meal prep!) and do all the steps up until topping with cheese. Then just cover, throw the casserole in your fridge and when you’re ready to bake it, top the whole thing with cheese, cover and bake for 30 minutes.
BOOM dinner done in no time!

I’m loving that Fall weather has officially decided to make an appearance as opposed to being 85 degrees in October so I’m looking forward to making the most of this weekend, especially since last week I was sick with the flu. - 2 ripe spaghetti squash
- 1 Tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef (95% lean)
- 2 cups crushed tomatoes
- 1 (8 oz) can tomato sauce
- ½ cup low-sodium chicken broth
- 1 tsp. Italian seasoning
- 1 packet Stevia
- Salt and pepper, to taste
- 2 Tbsp Parmesan cheese, freshly grated
- 3 Tbsp basil, chopped (divided)
- 1 cup mozzarella cheese, shredded
- To make the spaghetti squash, preheat oven to 350 degrees F and cut squash right down the middle. Scoop out all the seeds and place cut side down on a baking sheet lightly sprayed with oil so they don't stick.
- Bake squash in the oven for 45 minutes until tender.
- Meanwhile, drizzle oil into a large pan over medium heat and saute onion and garlic until fragrant, about 2 minutes. Add ground beef and cook until meat is no longer pink; drain if necessary.
- Stir in crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, Stevia, salt and pepper and bring to a boil. Reduce heat and allow sauce to simmer until the spaghetti squash has finished baking.
- When your squash is about ready, stir in grated Parmesan cheese and 2 tablespoons fresh basil in with the sauce; continue to simmer.
- Remove squash from the oven and scrape out all the strands of spaghetti using a fork, placing into a large bowl for convenience.
- In a 9x13 inch baking dish, spoon 1½ cups of meat sauce into bottom and spread out evenly. Layer with ½ of the spaghetti squash then 1½ cups more of meat sauce, then the rest of the spaghetti squash, the rest of the meat sauce (1½ cups) and top with mozzarella cheese.
- Cover with foil and bake spaghetti squash casserole in the oven at 350 degrees F for 30 minutes, then remove foil and bake and additional 10 minutes until cheese is melted.
- Top with remaining tablespoon of basil, serve and enjoy!

I made this a couple nights ago and it was SO good. Even my husband loved it, and he was pretty skeptical. I halved the recipe because it was just the two of us, and I wish I had made it as it is written so I could have had leftovers (my husband finished it off). I will definitely be making this again!

My husband likened this to a lasagna without noodles, and he went back for seconds! The darn grocery store was out of fresh basil though, and I really missed that flavour profile in the dish…oh well, next time. I turned the broiler on low for a minute right at the very end to get the cheese all golden and bubbly, too.

This has been on my menu for several weeks and we finally got around to making it last night and WOW! It was so good! One of my daughters has requested spaghetti for dinner and so we cooked this up. When we asked her what she thought she motioned to her half empty plate and said,” What does it look like?” LOL! It was a hit and we still have a ton of leftovers. Great recipe!!

Yes you can! Just put the squash cut sides down in a microwave-safe dish and fill the dish with a little water, about an inch. Microwave on high for about 12 minutes until tender and can be pierced with a fork – then just shred! 🙂

Looks good, I am going to try this recipe. I have to point out though, that I do not think the serving size should be listed as a 1/2 cup. That would maybe be a serving size for a preschooler! Not a typical adult.

Yes you could certainly do this, although spaghetti squash tends to get watery after the strands have been pulled. I would suggest baking the squash ahead of time, scrape out the strands and tightly wrap everything with plastic wrap to avoid them from getting watery. Then you can also make your sauce ahead of time (while the squash is baking) so when you’re ready you can throw the casserole together 🙂 Just an idea so you can avoid a watery casserole!
I added some balsamic vinegar to the sauce near the end of its cooking time, and it took it to a 10 for me! So good! I also used my Instant Pot to cook the spaghetti squash, and that was a huge time saver. I sliced it into rings, and I think it only took about 4 min on manual. I’ve also made the meat and sauce in the IP, and that sped up the process tremendously without sacrificing any depth of flavor.Thanks for one of our favorite recipes.
Soo soo good. Ate it last night for dinner and again today for lunch. It might even be better the next day. I think the fresh basil makes the sauce. Tastes amazing! Just made this last night and am obsessed! I am not a fan of spaghetti squash (texture and taste weird me out) but this recipe is to die for! The sauce is amazing and the texture of the squash is a little crunchy (not as mushy as typical squash can get). Second recipe I have tried of yours and LOVE them both! "I was an All-American 400m runner at 5-foot-9 and 108 pounds during college. Perfectly healthy but still way under an 18 BMI. Bodies naturally come in all shapes and sizes, thin and otherwise. Even people with eating disorders can have a so-called healthy BMI. Perhaps they should have doctors check for signs of anorexia and bulimia instead of making assumptions based on weight. Having a bunch of tall, thin, pretty, potentially healthy teenagers cram cupcakes for two weeks and fill themselves with fat injections until they're runway-ready might sound like a great idea for a reality show, but really, is forcing some models into a thicker body type that may not be natural for them the best way to solve a health problem? There has to be a better solution. It would be great if the industry would be more representative of different ethnicities and body types in general."

"I left Brazil when I was 16 and was doing fashion modeling in Milan, Paris, and Germany before moving to New York when I was 20. We slept 11 models in one apartment. You see who's eating, who's not eating, what they're eating. The girls who wanted it really badly just didn't eat. They needed to look a certain way for a particular client and that's what they're about. You're 15, 16, and you just want to be cool and fit in.
"For me, I got into yoga pretty seriously when I moved to the U.S. My body started changing, not just because of the yoga but because I was becoming a woman. But at that point, it wasn't cool to be fit or athletic if you were in fashion. I would go to some jobs and they'd tell me to move the way I was holding my arm because it looked too fit and muscular. There was a lot of pressure on me to be thin when I was doing fashion. I transitioned into doing more lifestyle modeling because I wanted to be healthy and I was strong enough to not get affected by the pressure. Things are getting better for the industry though. Having the law in France would be wonderful. The whole world is going in that direction. It's beautiful to see that the new standard of beauty is one of health. We're all human. We're not hangers."

I've never felt threatened in the industry, but I have felt out of place when I've been on certain runway castings. That's where you see more underweight models. It's out there. I feel like it's good to let people know that [extreme thinness] is not healthy and it's not a look people want to see. People want to see natural women who work out and eat healthy and are not frail."
"I was initially signed to my modeling agency to be in the fashion department. Honestly, I didn't like going to those castings. They're based on measurements and numbers. I couldn't put aside that this industry is perpetuating really damaging standards for girls. It's not necessary for people to be skin and bones.
"One time, during Fashion Week in New York, I went to a casting. They were like, 'Oh, great, you're a size 4, can you come in? We're looking on the larger end of things.' The other girls were at their skinniest because it was Fashion Week. It's really unnecessary torture. I was at another casting for a designer's private showroom for a designer. Her sample sizes were 0 to 2. She was just looking at our bodies. She looked at me and said, 'Thank you, you're so beautiful, but I'm looking for girls with really small heinies.'"
It's not necessary for people to be skin and bones.
"The motivation behind the legislation makes sense. We do want to promote positive body image with our girls. But it penalizes those who are smaller naturally. The only solution is to accept women as they are. Have more size opening in general. Instead, the samples are getting smaller every year and you have to fit the samples.
"I'm a size 4 and when I started out, agencies would find interesting ways of telling me I wasn't small enough. 'You're more girl-next-door, but if you slim down, we can see your features better.' 'We can see your cheekbones if you lose weight.' 'It's just your baby fat. Maybe when you're more of a woman and your face slims out. ' I've been told that my butt's too big, but I'm a black girl. If I lose weight, my butt's still there. It's about proportions.
"I'm 28 and I have model friends my age who are trying to stay the size they were at 17. Not only does it completely kill your self-esteem because you're punishing yourself for becoming a woman, it creates a deeper cycle of self-loathing. You're watching your calories every day. You're thinking, I better walk to this casting instead of taking the subway because I had fries. That burger is not going to make you five pounds heavier and keep you from working tomorrow. But we have a sense of urgency because of the career path we've chosen. The problem is not going to be solved by legislation. We have to have a complete reformation of what we believe beauty is."
Spinach Feta Pinwheels #SundaySupper
Flaky, buttery puff pastry is rolled around spinach, feta, mozzarella and green onions to create these outrageously delicious Spinach Feta Pinwheels!
Spinach Feta Pinwheels
I hosted my book club earlier this month. Our book selection was Exit West, a fictional account of a couple escaping the war torn Middle East though magical doors. Through these “doors” they were transported to three different countries to the west, one being Greece.
Instead of making a traditional spanakopita, I incorporated some of the Greek spinach pie ingredients into spiraled nibbles. No fussy phyllo dough to fiddle with! Brushing the puff pastry with an egg wash before rolling helped keep the spirals from unfurling, though a little reshaping was necessary before and immediately after their time in the oven.
Tips for Working with Puff Pastry:
Even though the traditional phyllo dough, which is used for spanakopita, is more finicky, you still need to understand how to work with puff pastry to get the best results.
- For the best tasting spinach feta pinwheels, look for an all butter puff pastry brand. I use Dufour, but note that it will be much more expensive.
- To prevent your pinwheels from unraveling while baking, make sure about 1/2-inch of one short end of your puff pastry is free of filling. Double check that it’s brushed with egg wash, then roll up from the opposite end, so that filling free edge adheres to the rolled cylinder.
- The pastry can warm up while you’re working with it. It bakes up best when chilled so I always pop it in the freezer while the oven heats up. If you have the time, you can cover the sheet pan with the pinwheels with plastic wrap and park them in the fridge until you’re ready to bake them.
- Puff pastry puffs up best when baked cold, but it also needs to be baked at a high temperature. This recipe calls for the oven to be set at 400°.

Spinach Feta Pinwheels
A twist on the classic Greek spanakopita using puff pastry!
Ingredients
- 1 egg whisked with 1 tablespoon of water
- 1/2 cup crumbled feta (buy a block and crumble it yourself
- 1/4 cup grated mozzarella
- 1 green onion, chopped
- 1/2 teaspoon garlic salt
- A few grates of fresh nutmeg
- 1 10-ounce package of frozen chopped spinach, defrosted and squeezed dry
- 1 sheet of frozen puff pastry, defrosted
Instructions
- Whisk together the egg and water, set aside.
- Mix together the cheeses, onion and seasonings. Set aside.
- Roll out the puff pastry on a lightly floured surface to flatten the seams. Brush the surface with your egg wash.
- Top the surface with the cheese mixture, then break apart the spinach and spread evenly over the surface. ***Leave about an inch free of toppings on one of the short sides.***
- Starting on the short side that's covered with filling, roll up the pastry like a jellyroll.
- Line two baking sheets with parchment. Slice the roll into ½-3/4 inch slices and place them on the prepared sheets. Pop into the refrigerator or freezer to let them cool as the oven preheats to 400 degrees.
- Bake for 15 minutes or until they're golden.

Thanks for the tips about preventing them from unfurling. Could you bake them in a muffin tin, tucking them tightly into the tin might also prevent unfurling. Our book club choice for this month (meeting Wednesday) is the excellent and well-written “The Lightless Sky: An Afghan Refugee Boy’s Journey of Escape to a New Life in Britain.” The Afghan Boy is 12 years old and the book, likes yours, probably, was unbelievable. Hi, Hillary! I know what you mean as I have a very old jar of whole nutmeg that I don’t think I’ll use up in my lifetime. I think just a pinch or two will be fine–I bet if I measured it would be 1/16th tablespoon or less. Hope you enjoy!
Can these be frozen?
I have no experience freezing these, but I think it might work. If you try it, I’d bake them directly from the freezer and add about 15-20 minutes to your baking time.

Blood Orange Old Fashioned for #CocktailDay
If you read my last post, I know what you're thinking: Blood Orange. again?! Well, admittedly, I look forward to January mainly for those beautiful little crimson jewels of citrus. Naturally, I've been on a bit of a blood orange kick lately. And, if we're being honest, I've been on a whiskey kick too. I've been a bourbon fan for a while now, but ever since trying an Old Fashioned at Krust (the bourbon & pizza bar next to the amazing cupcake company where I work), I've sort of been obsessed. They use these fancypants cherries that I'm absolutely gaga for and since I had my first one a few weeks ago, I can't seem to order anything else when I go!
The drink that started it all!
When I decided to participate in #CocktailDay with some of my favorite bloggers, the old fashioned was the first cocktail to come to mind. It also happened that I was in the middle of making Blood Orange Egg Tarts, so I was staring at deep red citrus segments as I dreamed up a way to customize the cocktail.
Sadly for me, I didn't have any schmancy-pants cherries lying around, and cherries are out of season [womp womp], so I had to settle for glaringly-red generic maraschinos from the jar. If you're so inclined, you can definitely make your own (which I plan to do this spring!).
The recipe is relatively easy, as there are only a few ingredients, which means you'll be making this all the time. Not that I'm complaining, especially if you're sharing one with me ;)
Blood Orange Old Fashioned
Blood Orange Old Fashioned
2 ounces rye or bourbon whiskey
1 teaspoon sugar
few dashes bitters
1 blood orange, half for the juice and the other half cut into wedges for serving
2-3 good maraschino cherries
In a whiskey glass, muddle together a few drops of bitters with the teaspoon of sugar. Add a splash of blood orange juice and muddle to combine. Top with bourbon and ice. Add cherries and stir to combine. Allow to sit a few minutes to allow the flavors mellow before drinking. Enjoy!

But, it is also the regal name this juice deserves, in my humble opinion. Skinny is because this juice will rev up your metabolism like nobody’s business to burn unwanted body fat. Detox because this particular combination of fruits and berries has known detoxification properties. And… Power due to the sheer amount of energy this juice provides in addition to essential nutrients that will feed your body’s cells for overall health and vitality—not to mention the cancer-fighting properties. It’s a powerhouse. Pink. Power. People!
When I developed this recipe for freshly squeezed juice, it was purely on the fly with my all-time favorite fruits and berry—ruby red grapefruit, Honeycrisp apples and the red raspberry. In fact, this beautiful fruit juice, Pink Lady Skinny Detox Power Juice, was the very first juice I made in my new juicer (a crushing or masticating juicer, the Breville Fountain Crush Juicer) that The Big Lug gave me as a gift when I was incredibly ill. He gave it to me at the end of September, and I took to it like a duck to water. Immediately, I started juicing as part of my 3-week all-fruit detox, which was amazing. The Benefits of Juicing
There is no escaping it. Juicing has caught on like wildfire and is taking the world by storm. Still. The movement is far from over. In fact, it has now become a lifestyle for many. More and more, people are jumping on the bandwagon and for good reason.

However, sometimes my mind and body craves freshly squeezed fruit juice. I am telling you, there’s nothing like fresh fruit juice to start your day!
From time to time, as I mentioned above, I enjoy fresh fruit juice as a part of my diet. When I do juice my fruit, I do not include any vegetables. I do not wish to debate my choice in food combining as it is purely a matter of personal preference and dietary needs. (I am trying to heal my gut after taking a super-strong antibiotic that messed me up.) In fact, as part of my food-combining regimen, I eat melons separate from other fruits as well. I won’t go into proper and improper food combining now, but will leave it for a future post when I share the 3-week all-fruit detox program I was on and the results.
Here are some of the benefits of juicing:

It is suggested that at least two to four 10-ounce glasses of vegetable or fruit juice a day, along with a raw diet, is the healthful way to go when detoxing.

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: Makes 24 ounces; two large 12-ounce servings or three 8-ounce servings.
There is nothing quite like fresh squeezed juice to get your motor running in an alkalizing and detoxifying way. Our Pink Lady juice comprises the very best of the crop in fruit for detoxing and an energy boost—Honeycrisp or Pink Lady apples, ruby red grapefruit and red raspberries. So refreshing and the apple, citrus and berry flavor profile simply cannot be beat!
- 1 large ruby red grapefruit, peeled and chopped
- 2 medium to large Honeycrisp or Pink Lady (red) apples, cored and sliced
- 1 6-ounce (170 grams) package red raspberries, rinsed and dried
Using a juicer, process grapefruit first. Then follow with the apples and raspberries.
Skim any unwanted foam from the top and discard.
Whisk and pour into chilled glasses, over ice if desired.
Garnish as desired with fresh berries and fruit as well as a fresh sprig of mint or basil. Insert straw and serve immediately.
Select the freshest organic fruits and berries for the ultimate in health benefits.
When preparing grapefruit, leave most of the white fiber surrounding the sections (not the bitter white outer pith) intact as it contains pectin and bioflavonoids which help the body to absorb Vitamin C. These phytonutrients also strengthen the body’s capillaries supporting overall circulation and thus enhancing the skin and facial complexion.
Leftover juice? Freeze into ice cubes for cocktails or popsicles for a refreshing treat!

I love how informative this post, is Stacy, but most of all, I love the looks of this juice! That color is intoxicating, and it sounds so refreshing! Pink lady apples are so sweet, they’re like nature’s candy, and I’ve been buying up ruby red’s a lot lately. I love to just eat them plain…no sugar…because I don’t think they need a thing. I love how this looks but I can’t eat grapefruit due to an interaction with a medicine I take. Is there something you can substitute?

Hi there, Kristi! Thank you for writing. To answer your question, you should ask your doctor or pharmacist first if it is okay to substitute any other citrus juice for grapefruit juice. For instance, ask if it is okay to drink orange or tangerine juice in its place. Another good suggestion is pineapple juice. I understand that grapefruit juice can interact with certain medications (like statin drugs). As always, safety first. Be careful and ask questions to avoid any serious health issues with a drug interaction. Good luck and happy juicing, my friend!
