Lime, Elderflower and Mint ‘Mojito’ Sorbet

Sorbet tips and variations

Sorbet is one of the first things most new owners make and it is not uncommon to hear the expression ‘you had me at Sorbet’ when people are talking about their demonstration!

I thought in this post I would just remind you of ways you can ‘play’ with the sorbet recipe and experiment with different flavours and consistencys.

Raw sugar is ground to icing sugar as a sweetener – The amount of sugar depends on the fruits used and can be reduced or omitted completely, in some recipes like my frozen yogurt I sweeten at the end as required with natural honey.

Your chosen wet and a dry ingredient e.g Fresh fruit and Ice are ground at high speed (speed 9) until the desired consistency is reached encorporated with aid of the spatula.

Add an egg white and encorporate – This is purely textural and optional, if you leave out you will just get an icier more granita or slushy style sorbet. When using as a drink base i:e with champagne do not add it, there is also no need if using cream as it has a creamy consistency anyway.

Understanding and choosing your wet and dry ingredient

If you just grind ice in your Thermomix you will make a ‘snow’, therefore if your second ingredient is also frozen (fruit) you will get a very dry granita, in order to get the preferred texture one of the ingredients needs to be ‘wet’ or a liquid needs to be added to emulsify the two often adding egg white alone is not always sufficient.

Dry Ingredients variations – Experiment with your ice cubes freeze:

Milk, Yogurt, Cream, Cordials ( Elderflower cordial works well) Juices, coconut milk or cream.

Fresh fruits, Cream, Yogurt, Juice, Water, liqueur or Alcohol!

If the sorbet is not coming together it is too dry so add more liquid, sometimes you need to add alot. Equally if sorbet is too wet add more ice, fruits like watermelon are very high in water and subtle in flavour so maybe best pre frozen or combined with other fruits.

Once you understand the priciple, get creative with flavour……

  • Add zest when milling the sugar to add a real zing!
  • Herbs, like mint, rosemary, lavender
  • essences, pastes, cordials or infusions

Cocktail books can provide inspiration for pairings like pineapple and coconut (fresh pineapple and frozen coconut cream) Lime, elderflower and mint (pictured), there is no right or wrong combination so play around with your favourite flavour combinations and blends and have fun with it……

Ingredients

15g Raw sugar (pre milled to icing)

10 – 12 Mint leaves

A couple of handfuls of ice

Put milled sugar, limes cut into quarters and mint leaves in TM bowl.’muddle’ the above by 20 seconds, Reverse, speed 4. This bruises the mint, juices the lime and dissolves the sugar.

Add Bacardi, Ice, and Soda water 5 seconds, reverse, speed 4

Serves approx 2 glasses.

If you do not like all the ‘greenery’ place rice basket into TM and use as a strainer and pour over ice. I don’t know how close to an authentic Mojito it is its just my take on it, adjust sweet and sour to taste….Very nice on a hot summers afternoon.

With temperatures set to roasting in London, having a delicious cool summer drink really helps to make the most of the weather!

As the Thermomix can easily crush ice, blend fruit and mix ingredients, it’s superb at making drinks that will help you cool down, relax and chill out.

I’ve had a look around the web for some awesome suggestions to help you beat the heat. Read below!

Thermomix Mojito

This delicious mojito recipe is adapted from KirstyE on the Thermomix Australia website and makes two mojitos.

  • 15g icing sugar
  • 15-20 mint leaves (save a few as a garnish)
  • 1 – 2 limes
  • 50g bacardi
  • 50g soda / sparkling water
  • 200g ice

  1. Chop the limes into quarters and place in the bowl with the sugar and most of the mint leaves (save a few to garnish). Put on for 20 seconds, reverse at speed 4.
  2. Add the bacardi, ice and sparkling water and put on for 5 seconds, reverse at speed 4.
  3. Pour into chilled glasses with extra ice and garnish with the left over mint. If you don’t like bits in your mojito, use the internal straining basket or a cocktail strainer.

Thermomix Strawberry Daiquiri

I was inspired to create this after seeing this in some bars. I like serving this cocktail in chilled cocktail glasses, and like the picture above, I run the edge of the glass with a lime and then dip it in sugar to give a really nice frosted look!

  • 50g Bacardi or white rum
  • 12 fresh strawberries (preferably frozen in advance)
  • 2 limes (or 20ml lime juice)
  • 1 tbsp sugar plus extra to dust the glasses
  • 100g ice (you can add more or less depending on your taste)

  1. Cut one of the limes in half, and run around the edges of the glasses you are going to serve the cocktail in. Dip the upturned glasses in the sugar.
  2. Squeeze the rest of the limes into the Thermomix. If you really like lime (and they are washed and unwaxed), you can just chuck them in the Thermomix.
  3. Add the strawberries, Bacardi/rum, ice and sugar to the Thermomix.
  4. Close the lid, and put on for 20 seconds at speed 8.
  5. Pour into glasses and serve. Garnish with either a slice of lime, or a strawberry resting on the edge of the glass.

Thermomix Long Island Iced Tea

This recipe is inspired by one by Andy Pearson on the BBC website.

  • 40ml vodka
  • 40ml gin
  • 40ml Bacardi or white rum
  • 40ml fresh lemon juice
  • 4 tsp sugar
  • 200g ice
  • Coca-cola, to top up
  • (Optional garnish) 2 glace cherries on a cocktail stick
  • (Optional garnish) 2 slices of orange or another citrus fruit

  1. Put all the ingredients (except the Coca-Cola and the glace cherries) in the Thermomix. Blend for 5 seconds speed 4.
  2. Pour into chilled glasses, top up with Coca-Cola and garnish with the glace cherries and slices of orange.

Thermomix White Russian

  • 100ml vodka
  • 40ml Kahlua or Tia Maria
  • 30 ml fresh cream
  • Ice to serve

  1. Put all the ingredients in the Thermomix (apart from the ice) with the mixing tool, and put on for 20 seconds speed 4.
  2. Pour over ice into glasses and serve.

You can also substitute the cream for Bailey’s if you are looking for something stronger and different!

Thermomix Sea Breeze

  • 80ml vodka
  • 240ml cranberry juice
  • 60ml grapefruit juice
  • 200g ice
  • (Optional garnish) 2 wedges of lime

  1. Put all the ingredients (except the wedges of lime) in the Thermomix. Blend for 5 seconds speed 4.
  2. Pour into chilled glasses and garnish the edge with lime.

Flesh of 3 mangoes (I have been freezing into ice cube trays as of late but you can use unfrozen) or any fruit around 300grams worth.

(Lemoncello is an Italian liqueur which can be bought at the liquor store or you can make it yourself by soaking Vodka with lemon skins for a month or so. I'm just not that organised.)

250gr punnet strawberries washed and hulled (you can use frozen strawberries or raspberries as well)

Thermomix Champagne Fruit Cocktail

SERVES:

Ingredients Nutrition

  • 50 -100 g sugar
  • 300 g strawberries, any fruit you like will do
  • 1 lemon, peeled and pithed
  • 1 orange, peeled and pithed
  • 600 -700 g ice cubes
  • 1 (750 ml) bottle sparkling white wine, chilled

Directions

  1. Place sugar into bowl and mill for 10 seconds/speed 9.
  2. Add the fruit and ice and SLOWLY turn the dial up to speed 10. Use the spatula to incorporate all of the fruit and continue to process for about 40 seconds or until completely combined.
  3. Turn the dial to speed 8 and SLOWLY pour in the wine (or lemonade). Use the spatula to allow the drink to blend uniformly without spilling over. Blend for 10-15 seconds until combined.
  4. Serve immediately.

Oooh do we have a fun little recipe for you today! Yep, we’re SO excited about our new Thermomix Watermelon, Vodka & Mint Cocktail… and we think you’re going to fall in love too.

This is pretty much the most perfect summer cocktail you can think of. It’s light, yummy and oh-s0-refreshing. Trust us, you need one in your life right NOW.

To make this cocktail, you simply puree watermelon chunks in the Thermomix, add vodka and a squeeze of lemon juice. Mix to combine. Fill 4-6 glasses about 1/4 full (the number of glasses will depend on how strong you’d like it!), add fresh mint leaves and top up with soda water or lemonade. Enjoy!

Thermomix Watermelon, Vodka & Mint Cocktail

Ingredients

  • 350 g watermelon chunks
  • 130 g vodka
  • juice of 1 lemon
  • lemonade , to serve
  • fresh mint leaves , to serve

Instructions

Place the seedless water melon chunks (with the rind removed) into the Thermomix bowl.

Puree on Speed 8, 10 seconds.

Add the vodka and lemon juice and mix on Reverse, Speed 5, 10 seconds.

Pour into glasses (fill about 1/4 of the way to the top - more or less depending on how strong you like it)

Top up with lemonade and add mint leaves to decorate.

Ingredients

  • 250 ml cream
  • 1 tsp vanilla extract
  • 1 tsp instant coffee
  • 395 g can condensed milk
  • 3 tbs chocolate sauce
  • 500 g Baileys Irish Cream
  • chocolate squares, for serving

Instructions

Place all ingredients into the Thermomix bowl (except for the chocolate squares).

Add chocolate squares to your serving glasses, pour in the cocktail and enjoy!

Recipe Notes

Please note: you don't want to 'whip' the cream as the mixture will become curdled. Start your Thermomix on Speed 2 and slowly increase to Speed 4. If you notice this happening, turn the speed back down and continue to mix until just combined. If your mixture does appear curdled, simply pour it through a sieve and then allow the drained liquid to settle. Scrape any excess off the top with a spoon.

You can omit the coffee granules if you like (but they give a great Expresso-style taste!)

Thirsty Thursday – Toblerone Cocktail Recipe

oh boy, oh boy, oh boy! Toblerone chocolate in a cocktail…. there are just no words! 🙂

Yield: Serves 2-3 cocktails

  1. Drop a dob of honey in the bottom of a cocktail glass and using a teaspoon pull the honey up the side of the glass.
  2. Place Toblerone in TM bowl 8 sec / speed 8 . Reserve and place aside a large pinch of grated chocolate for decoration.
  3. Add remaining ingredients 1 min / speed 10 .
  4. Pour into honey lined glass and sprinkle with reserved grated Toblerone chocolate.

Recipe: Frozen Margarita

Ah, Friday. I see you. I salute you. And I margarita you.

Yes, Stylers, when life hands you lemons from the backyard tree and a supply of duty-free tequila and Cointreau, it’s time to head to MargaritaVille.

I tell you, it’s a lovely place.

Quite refreshing but a little on the tarty side. But that’s ok with me.

We got re-acquainted with MargaritaVille when in the US – particularly on the West Coast.

I don’t think I ate at a restaurant that didn’t offer up this cocktail. I made it a little mini mission to try a few different ones but it’s the original that I’m more likely to whip up at home.

Now, you don’t have to go down the frozen path if you don’t want to. It’s just my preference.

We also came across a number of pre-mixed margarita drinks while in the States but I’d still stick to the old school combo of tequila, Cointreau (or Triple Sec) and lemon blizted with ice over a mixer any time. I tell myself that it’s healthier that way 😉

Ingredients (makes two very big drinks)

4 cups of ice cubes

1/3 cup of Tequila

2 tbs Cointreau

6 tbs freshly squeezed lemon juice

1. Throw all ingredients in a blender (I use our Thermomix … seriously good for turning it into a margarita slushie).

2. Blitz until you get the desired consistency.

3. Rub a lemon or lime wedge around the glasses you’re planning to use.

4. Turn glass upside down on a plate covered in salt so that salt covers the rim.

5. Pour into the salt-rimmed glasses and enjoy. Best served with a side of guacamole, don’t you think?

Now, a little note on my glasses. Yes, they’re THE Mexican blue glasses we all had to have in the early ’90s. Or was that just me?

Now, I’m generally not a hoarder but when it comes to my Mexican blue glass collection, they have followed me around since that first purchase. I have a whole cupboard of them in different shapes and sizes.

Do they qualify as vintage? I suspect yes.

I say YES to just about any frozen alcoholic yumminess, but NO to the glasses, I did have a set or 3, but over the years, my choice of glasses has got finer and finer, and really don’t enjoy chunky anymore. My wine glasses are so fine, way to easy to break, but everything tastes soooo much better 🙂

Looks very refreshing but I simply can not do tequila anymore! Got something to do with very bad memories of tequila shots, lemon, salt and a mis-spent youth with the good old $1drinks……

I’m with you Nikki, big yes to the mexican blue glass, love ’em – keepin’ ’em! Though didn’t realise they were from the 90’s till you mentioned.

That’s when I first started buying them – 1990!

I just happen to have a whole box of lemons and a Thermomix! But no tequila or Cointreau *sigh*. I do have plenty of gin though. Wonder what a Hendricks and lemon slushie would taste!

I reckon it would be pretty damn good!

I cheat and use margarita mix – and get my batman aka the Welshman to make them for me! X

I’m glad you agree – I’m so glad I’ve never ditched them. I’m usually a shocker at getting rid of stuff I don’t use … but just decided to make a conscious effort to use them instead!

Pimm's cocktail recipes

Shake, strain into a cocktail glass, and serve.

Mix the blackcurrant and the lemonade together. Add the gin and pimms together stirring well but do not shake. Garnish with fruit pieces. Mix a batch and serve liberally.

Pour pimm's no.1 into a highball glass. Add a twist of lemon and fill with 7-up. Garnish with a slice of cucumber.

Pour Pimm's over ice cubes in a large highball glass. Fill with 7-up, add twists of lemon and cucumber peel, and serve.

Pour pimm's no.1 over ice in a large highball glass. Fill with ginger ale and garnish with a lemon and cucumber peel.

Pour into an ice-filled wine goblet. Garnish with a slice of lemon and a cherry.

Shake, strain into a champagne saucer, and serve.
