Cafe Cocktail

Ingredients

  • 1 ounce cognac
  • 1 ounce creme de cacao -- creme de cacao
  • 2 ounces coffee
  • 1 teaspoon superfine sugar

Instructions:

Stir well with cracked ice, then strain into a chilled cocktail glass and garnish with a twist of lemon peel.

The Wondrich Take:

Tropical paradises ain't what they used to be. Not the urban ones, anyway. Time was, you could count on 'em for block after block of romantic, half-decaying colonial architecture, chattering throngs of poor but picturesque locals, and lots and lots of sleepy charm. Now? Cars. Shabby, water-streaked concrete high-rises. Locals who are just as poor (if not poorer) and not nearly as picturesque. All the charm of Soylent Green-era New York. So let's forget about the nasty, troubling present and indulge in a little harmless nostalgia. It's, say, 1932, and you're in Old Havana. Siesta time is behind you, the evening shadows begin to fall, and you've got only one thing on your mind. Okay, maybe two things, but since the local lovelies are all heavily chaperoned, you'll settle for that cocktail.

Only one problem: where to get it. Do you head out to Oriental Park and its swank Jockey Club, or do you slum it with all the other Yanks at Sloppy Joe's? Or you could just hang out at the hotel -- they all have bars, from the palatial Nacional to the obscure Old Ponce de Leon Home, across from the Cathedral. In short, Havana's got nothing but bars. But if you're a real cocktail fiend, there's only one. La Florida, aka El Floridita, at the corner of Obispo and Monseratte. Why? The Floridita has Constantino.

Constantino Ribalaigua Vert, alias "El Grande Constante," was more than just another Cuban cantinero. Son of a Catalonian fisherman, Ribalaigua arrived in Cuba in 1914 and promptly put Cuban mixology on a sound scientific footing. His daiquiris were unforgettable (Hemingway swore by them). His Presidentes were things of classical beauty. What he didn't invent, he perfected.

And yet, we must confess that when we came across this formula in a list of Floridita drinks that Esquire's Murdock Pemberton test-drove just before World War II, we were skeptical. We generally like a little more octane in our drinks, and besides, it looks sweet enough to make a heroin addict wince. Silly us -- it's goddamn delicious. Stir up a pitcher of these after dinner and feel the balmy, tropical breeze waft in, bringing with it the heavy scent of exotic, tropical blooms and -- and, well, according to folks who were actually there in the '20s and '30s, Havana was noisy, studded with modern office buildings, plastered with billboards and packed to the bursting point with cars. So much for nostalgia.

1 oz. Absolut Vodka

¼ c. Sauza Blue Silver Tequila

2 tbsp. pumpkin spice syrup

1 tbsp. vanilla extract

½ tsp. pumpkin pie spice

Combine cream, pumpkin spice syrup, sugar, vanilla extract, and pumpkin pie spice in a cup and stir. Pour into coffee and add tequila. Garnish with whipped cream and cinnamon.

1 oz. Frangelico

1 oz. SKYY Vodka

¾ oz. cold espresso

3 tbsp. light chocolate syrup

2 oz. New Amsterdam Vodka

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Garnish with three coffee beans.

1½ oz. Espolón Tequila Reposado

½ oz. coffee liqueur

2 tbsp. agave nectar

1 c. heavy cream

1 tsp. vanilla extract

Combine agave nectar, heavy cream, and vanilla extract in a bowl and stir until firm. Combine tequila, coffee liqueur, and coffee in a cup. Top with cream. Garnish with grated nutmeg.

½ oz. Stolichnaya Vanil Vodka

Combine vodka, Frangelico, and coffee in a glass and stir. Garnish with whipped cream and a raspberry.

1 oz. De'Longhi Espresso

½ oz. simple syrup

½ oz. orange juice

To make simple syrup, mix equal parts hot water and sugar until sugar is dissolved. Muddle blackberries in the bottom of a cocktail shaker. Add remaining ingredients and ice, and shake vigorously. Strain into a glass filled with ice and garnish with an orange wheel and blackberry.

1½ oz. Godiva Chocolate Infused Vodka

Combine coffee and vodka in a glass and stir. Garnish with a scoop of whipped cream and caramel sauce.

Double shot espresso

2 oz. SKYY Infusions Coconut

½ oz. coffee liqueur

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Garnish with coffee grounds.

1 oz. Patron XO Coffee Liqueur

1 oz. Baileys Original Irish Cream

Double shot of espresso

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Garnish with a mint sprig.

1¼ oz. Grey Goose Cherry Noir

Dash of simple syrup

To make simple syrup, mix equal parts hot water and sugar until sugar is dissolved. Combine all ingredients except cream in a cocktail shaker filled with ice. Shake vigorously and strain into a glass filled with ice. Top with cream. Garnish with grated espresso beans.

2 oz. Baileys Original Irish Cream

1 tsp. pumpkin pie spice

Combine Irish cream and pumpkin pie spice in a mug. Pour in coffee and stir. Garnish with whipped cream.

1 oz. Blue Ice Vodka

¾ oz. coffee liqueur

¾ oz. raspberry liqueur

Combine vodka and liqueurs in a cocktail shaker filled with ice. Shake and strain into a champagne flute. Garnish with whipped cream and semi-sweet chocolate shavings.

1 oz. spiced rum

1 oz. butterscotch schnapps

Combine all ingredients in a glass filled with ice and stir. Garnish with whipped cream and a coffee bean.

½ oz. Baileys Irish Cream

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Rim glass with crushed pistachios

3 oz. Purity Vodka

½ tbsp. coffee grounds

1 oz. coconut milk

Pour coffee grounds into a bottle of vodka and let sit for three minutes. Strain vodka into a cocktail shaker filled with ice. Add remaining ingredients and shake vigorously. Strain into a martini glass and garnish with three coffee beans.

½ oz. SVEDKA Vanilla Vodka

1 oz. coffee liqueur

1½ oz. Honey Jack Daniels Whiskey

1 oz. brown sugar simple syrup

To make brown sugar simple syrup, mix equal parts hot water and brown sugar until sugar is dissolved. Combine whiskey, simple syrup, coffee, and cream in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Garnish with whipped cream.

1½ oz. Voli Espresso Vanilla

1½ oz. Patron XO Coffee Liqueur

½ oz. Godiva Chocolate Liqueur

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously and strain into a glass. Garnish with whipped cream and shaved chocolate.

1½ oz. Russian Standard Vodka

½ oz. coffee liqueur

1 oz. Godiva Chocolate Liqueur

¼ oz. candied orange simple syrup

½ oz. Godiva White Chocolate Liqueur

3 oz. steamed milk

To make candied orange simple syrup simple syrup, mix equal parts hot water, candied oranges, and sugar until sugar is dissolved. To make froth, steam equal parts milk and white chocolate liqueur. Pour espresso, chocolate liqueur, and simple syrup into a glass. Stir and top with froth.

1 oz. Kilbeggan Irish Whiskey

½ oz. Dekuyper Hazelnut Liqueur

½ oz. chocolate syrup

Combine all ingredients in a glass and stir. Garnish with whipped cream and chocolate shavings.

    Cold brew coffee — bottled, nitro on tap or built to order — is America's hottest way to chill out. Unlike iced coffee, which is simply hot brewed coffee or espresso poured over ice , cold brew is made by steeping coffee grinds in room temperature to cold water for half a day or longer. Though a staple at third wave coffee shops for a couple of years now, the drink hit critical mass when Starbucks launched its own brew this past spring. Lauded for a flavorful, smooth and less acidic profile , it was only a matter of time before bartenders decided to get creative with the brew in place of standard coffee. Below, 22 awesome cold brew coffee-spiked libations, from a White Russian-inspired intoxicant to the perfect brunch potion.

    Cocktail: Rise ‘N’ Shine ($8) with cold brew coffee, Troy & Sons Moonshine, Amaro Averna and vanilla syrup.

    "We love a good, or bad, pun at Ration & Dram, and adding coffee into the mix seemed like a natural fit — the coffee being the 'Rise' and the moonshine being the 'Shine’!" explains drink creator Kysha Cyrus. This cocktail drinks bold "with a subtle sweetness and robust flavor from the nitro coffee."

    Cocktail: Marooned On Coffee Island ($12) with Hamilton Jamaican Pot Still Gold Rum, Mount Gay Black Barrel, cold brew coffee, salt-roasted plantain, PX sherry, Bitterns' Xocolatl Mole Bitters, cinnamon and fresh whipped cream.

    Barman Harrison Ginsberg wanted to create a less-fruity banana cocktail, so he went with the plaintain for its savory notes. When roasted with salt it not only complements the two rums, but enhances the cold brew coffee. "A little float of fresh cream on top [gives] it an Irish coffee feel, while [it's] still . a modern cold coffee cocktail," says Ginsberg.

    Cocktail: Of Quarters & Halves ($12) cocktail on nitro tap: HalfWit cold brew, amaro, Rittenhouse Rye, cacao and Bittermans' New Orleans Coffee Bitters.

    This cocktail, inspired by the famous Irish coffee from San Francisco institution the Buena Vista Cafe, uses coffee and rye as a balanced base for the amaro and cacao. Plus, s erving it from a nitro tap mimics the silkiness of cream.

    Three Dots and a Dash

    Location: 435 N Clark Street, Chicago, IL

    Bartender: Diane Corcoran

    Cocktail: The "Cacchen" Some Rays ($13) with reposado tequila, dark Jamaican rum, overproof rum, La Colombe cold brew coffee, passion fruit, lime and pineapple.

    You can't go wrong with a tiki coffee cocktail. According to beverage director Diane Corcoran, "This cocktail is very bright and tropical, but has a bite from tequila and a nice strong coffee backbone. The flavors of the tequila blend really well with the passion fruit and the coffee in this drink."

    Midnight Rambler

    Location: 1530 Main Street, Dallas, TX

    Bartender: Chad Solomon

    Cocktail: Hey Ho, Let's Go! ($6) with lemon juice, Crazy Water #4 Texas mineral water, Ethiopian Sidama Ardi Cold Brew Coffee, demerara syrup, Merlet Cassis, Bols Genever, Jameson and mineral saline (salt solution).

    The cold brew coffee in this fancy shot is actually made in a Yama brewing tower. It takes hours to produce, but yields a deliciously smooth brew. "The entire shot is built around the fruity aromatics found in the coffee. Irish Whiskey and cassis mesh well here, and the everything else enhances the mouthfeel and structure on the palate," says Solomon.

    L.A. Chapter at the Ace Hotel

    Location: 927 S Broadway, Los Angeles, CA

    Bartender: Daniel Sabo

    Cocktail: Cufflink Flip ($13) with rye, cold brew coffee, apricot, orange citrate and egg.

    The Cufflink Flip is a n eye opener off the all-day menu that's so boozy that the Ace won't serve it before 10 a.m. Barman Daniel Sabo was playing with coffee egg creams when he was working on this cocktail. "And since it was breakfast focused, we thought we could go richer, so we turned it into a flip and lost the fizzy element," says Sabo.

    Bartender: Vincenzo Marianella

    Cocktail: #INeedCoffee ($13) with bourbon, Amaro Nonino, cold brew coffee and cream.

    Vincenzo Marianella created this Instagram-ready coffee cocktail to pair with Love & Salt's sweet brunch dishes like Nutella toast. He favors the cold brew as it "ensures a more flavorful, nuanced final product that is less bitter, so it blends better with the other ingredients."

    Cocktail: Night Shift ($12) with bourbon, Jelinek Fernet, milk and cold brew espresso.

    Barman Ryan Wainwright created this perfect brunch cocktail before he made his move to Terrine. Originally, it was built from Pu'erh tea and chocolate syrup with iced espresso, but after Wainwright's departure the restaurant changed it to cold brew espresso — which makes for a smoother drink and renders the sweet syrup unnecessary.

    Cocktail: Mr. Menotti’s Cold Coffee Grog ($12) with Chairman's Reserve spiced rum, Diplomatico Reserva Exclusiva, Flor de Caña 7 Year, Hamilton Guyana rum, Atlantico rum, Skipper rum, cold brew coffee and vanilla-fernet-infused whipped cream.

    Not many will pick up on and appreciate the fact that this coffee cocktail blends six different coffee beans with six different rums. And despite those numbers, it's an easy-drinking libation whose complexity is intensified by the fernet whipped cream.

    Toca Madera

    Location: 8450 W 3rd Street, Los Angeles, CA

    Bartender: Juan Martinez

    Cocktail: But First, Coffee ($15) with vanilla infused tequila, Stumptown cold brew, Café Lolita and cinnamon.

    Bartender Juan Martinez's love for vanilla lattes inspired this cocktail. He split three vanilla pods and infused them in a bottle of tequila for three days. "When looking for tasting notes in the cocktail you get chocolate from the Café Lolita, vanilla with a hint of agave, and a rich, complex cold brew from my favorite coffee shop, Stumptown. Overall, it's one of my favorite cocktails of all time," says Martinez.

    Cocktail: Okay Cup ($14) with demerera rum, Amaro Nonino, Giffard Vanille de Madagascar, egg white and extra strong cold brew coffee.

    Barman Grant Wheeler counterbalanced a ny coffee bitterness with the d emerera rum's earthy sweetness. "This cocktail came about from just exploring what flavors I knew worked well with rich bitter coffee; raw sugar and vanilla," explains Wheeler.

    Cocktail: Bajan Mocha ($17) with Stumptown Nitro Cold Brew, Mount Gay Black Barrel rum, demerara syrup, heavy whipping cream and vanilla extract.

    The lounge in the Langham Place on Fifth Avenue prides itself as being the only hotel in the city to offer Stumptown Cold Brew on tap. So, not surprisingly, the cold brew's coffee flavor takes center stage in this cocktail, which is frothy but not too sweet.

    The NoMad Bar

    Location: 10 W 28th Street, New York, NY

    Bartender: Leo Robitschek

    Cocktail: The Gentlemen's Exchange ($16) with rye whiskey, Suze, Foro Amaro, Vermouth di Torino, cold brew coffee, absinthe and Angostura bitters.

    Eleven Madison Park has been experimenting with cold brew in cocktails since 2008. "Our cold brew has aromas of chocolate and citrus, as well as a bitter undertone, which allows it to work really well with whiskey," says drink creator Leo Robitschek. "In this particular Manhattan variation, I wanted to bring out those flavors and enhance them with the Sicilian oranges and mint from the Foro Amaro, as well as a sarsaparilla-like quality you get from the Vermouth di Torino."

    Cocktail: Summer Brew ($13) with Cruz Reposado, cold brew coffee, almond milk, Crown Maple Syrup, Ancho Reyes Liqueur, Angostura bitters and cayenne pepper.

    Location: 121 W 10th Street, New York, NY

    Cocktail: Tahitian Coffee ($16) with Plantation Barbados rum, Campo de Encanto pisco, cold brew concentrate, house falernum, honey, guava, passion fruit, orange and lime.

    Perfect for Tiki-loving coffee addicts, the Tahitian Coffee cocktail marries the island staples of rum, tropical fruit, and coffee into this scorpion bowl-style drink, which is served in a Chemex for two. According to bartender Garret Richard, who created it for Jim Kearns' program, the Stumptown cold brew rounds out "the fruit flavors in contrast to most coffee cocktails where java is the central component."

    Cocktail: Boom Swagger Swagger ($9) with Cruzan Black Strap Rum, falernum, Dry Curaçao, and Stumptown cold brew nitro draft.

    Bar manager Jesse Card wanted to create a Corn & Oil cocktail with a Pacific Northwest twist, thus he added locally-made cold brew. His Boom Swagger Swagger is "rich and full of fun Caribbean flavors all riding the wave of caffeinated cold brew."

    Rum was the perfect spirit to complement the coffee in the 91 Unleaded. It's a smooth blend of sweet yet smoky, caramel and coffee, with a touch of spice from the rum's tobacco notes.

    Cocktail: King Coffee ($8) with Flor de Caña white rum, vanilla syrup, AleSmith's Speedway Stout and cold brew coffee.

    This is another coffee cocktail inspired by a vanilla latte. But drink creator Erick Castro wanted to make his version boozier and more tropical. "The flavors of the stout and the fruitiness of the white rum create a creaminess and complexity that make this the perfect pick-me-up or after dinner drink," he explains.

    Cocktail: Coffee and Stout ($9) with stout on nitro (rotating), Stumptown Cold Brew Coffee, Cardamaro, simple syrup and Bonal.

    Even though Brewcade doesn't have a full liquor license, that doesn't stop the arcade bar from serving cocktails. This one, created by Blackbird's Matt Grippo, enhances the coffee flavor in the stout (which changes up regularly) with actual cold brew.

"The Charles Cold Brew-Kowski was simply inspired by its namesake Charles Bukowski, the Los Angeles author known for his influence on modern literature, in addition to his prolific drinking habits, but also because the name was just so much fun to say," explains general manager Crellin Pauling.

    Old Timber (Rye Cocktail With Fernet) Recipe

    If you like Old Fashioneds, you'll enjoy this simple stirred cocktail, created by Gabe Cothes of San Francisco's Salt House. It's deeply woodsy, with added depth and aroma from fernet, an Italian amaro, and orangey triple sec.

    • Using alternative brands of fernet plays down the intensely minty, medicinal profile this cocktail would otherwise have.

    Ingredients

    • 1 1/2 ounces (45ml) rye whiskey (such as Bulleit)
    • 1/4 ounce (7ml) Jelínek Czech-style fernet, Fernet Leopold, or Fernet Francisco (see note above)
    • 1/4 ounce (7ml) triple sec, such as Combier or Cointreau
    • Cinnamon stick and orange twist, for garnish

    Directions

    Add rye, fernet, and triple sec to a mixing glass and fill with ice. Stir until well chilled, about 30 seconds. Add a large ice cube to a rocks glass and strain cocktail into glass. Garnish with cinnamon stick, express orange oils onto drink, and add twist to glass.

    Special Equipment

    Be careful with your fernet: This drink comes out medicinal and menthol-heavy when made with the popular Fernet-Branca. Instead, use cinnamon-y Jelínek Czech-style fernet, minty Fernet Leopold, or super-dry Fernet Francisco.

    How to make an espresso martini

    Garnished with a few coffee beans, the espresso martini is a sophisticated little devil – it’s dressed to kill and has landed me in trouble a number of times.

    Created in ‘80s Soho, London, by cocktail legend Dick Bradsell, the story goes that a delightful young lady entered his bar and asked Dick to make her a drink that “wakes me up and then [insert expletive here] me up”. Thus, a legend was born, fueling office parties and “Crimbo” get-togethers the nation over.

    The Espresso Martini is a sumptuous mix of vodka, coffee liquor and espresso that gets people giggling with excitement at its mere mention. It’s rich, indulgent and creamy, and the shot of espresso will make sure you keep up with the pack if you find yourself flagging at your office Christmas party. I’ve got the CRU Kafe, Food Tube, Drinks Tube and Food Busker parties coming up in the next few weeks, so these will keep me going nicely.

    As a drink it’s deliciously confusing – coffee and vodka simply shouldn’t be allowed to taste this good together, but they do. The liqueur has a wicked sweetness while the coffee gives it a rich depth, whilst the vodka delivers that necessary kick that lets you know you’re doing something naughty. It’s all finished off with the thick, luxurious, creamy froth that sits at the top of the glass. It’s vital that you use a good quality espresso shot – obviously I make mine fresh from the Nespresso ® machine with a CRU Light Roast pod.

    This drink works well on its own as a party cocktail, but can also be employed effectively at dinner parties as an excessively luxurious digestif after your main meal – both the coffee and the coffee liquor aid digestion. If you’re feeling particularly decadent, you can do away with the coffee course entirely and head straight for this to make sure that you escape that fatal after-dinner lull that so often plagues these events.

    Put simply, it’s the best way to perk up your evening (no matter what type of party your throwing) and keep it going into those wee, wee hours. I love making them at home but remember, they will lead you astray. Happy festive season!

    How to make an espresso martini

    Pour the vodka, coffee liqueur and espresso into a cocktail shaker. Fill the martini glass with ice to chill and then fill the cocktail shaker with ice as well.

    Put the other half of the shaker on top and give it a good tap to lock it in, then shake the living daylights out of it. You want the ice to smash up while chilling the liquid down; its what creates the frothy top. Try to use fresh-from-the-freezer ice, as melting ice is too watery and will dilute the martini.

    Once shaken, tap the side of the shaker to break the vacuum seal. Empty the ice out of the Martini glass, then place the strainer on top of the shaker and pour the contents through a sieve directly into the glass. Using the strainer and the sieve helps create a rich, smooth, froth.

    Garnish with 3 coffee beans and attempt to contain your delight.

    Looks like the Nespresso ref has been dropped. I’m glad, such content marketing is obvious and cheapening.
