Margarita
Eben Freeman, bartender of Tailor Restaurant in New York City, developed this adaptation of a classic cocktail. Reposado tequila, aged in oak for at least two months but less than a year, gives the drink a smooth smokiness. If you prefer a more vegetal flavor, you could substitute blanco (unaged) tequila; it's probably best to steer clear of añejo (aged in oak for at least a year but less than three years), which could darken the hue and add unwanted oak, vanilla, or caramel flavors.
To sweeten his Margarita, Freeman trades the traditional sugar syrup for superfine sugar, which gives the drink a slightly grainy texture. Freeman's final signature touch: Only half the glass gets a salted rim.

Ingredients
- 1/4 cup kosher salt
- 1 wedge lime
- 2 tablespoons (1 ounce) fresh lime juice
- 2 heaping teaspoons superfine sugar
- 1 tablespoon (1/2 ounce) Cointreau or other triple sec orange liqueur
- 1/4 cup (2 ounces) reposado tequila
- About 2 cups ice cubes
Preparation
- Spread salt on small plate. Rub lime wedge halfway around rim of 10-ounce glass (such as double old-fashioned). Dip moistened side of glass in salt to lightly coat. Set aside.
- In cocktail shaker, stir together lime juice and sugar until sugar partially dissolves (about 5 seconds). Add Cointreau, tequila, and 1 cup ice cubes. Shake vigorously for 25 seconds, then strain into prepared glass. Fill glass with remaining ice cubes.

I guess everyone has a different perception of what's considered the "just like in Mexico" margarita! These were way to harsh and citrusy for my guests. I made them and found half full glasses all over my house after the party, and no one asked for a 2nd. I had tons of compliments on the other items I made for our cocktail party and no one said a word about these. Not a good sign. I can't drink lime juice anymore, but I should have done a little taste test! Husband said they were too citrusy. Our perfect Mexican margarita is ultra smooth, slightly sweet & really well balanced, but made with fresh ingredients. I find that only in America are they super harsh and limey. I like the idea of this recipe, just need to adjust the proportions to get a better balance of flavors.

This drink makes me think I'm back in Cabo San Lucas. Thank you. I have been struggling with a finding an authentic margarita recipe and this is as good as it gets! I added a tbs of gran marnier on top to make it a cadillac (after I tried it per recipe first!) Seriously, if you want a Mexico margarita minus the drug cartels, this is your baby. Enjoy.

This recipe is great except I recommend using simple syrup instead of sugar. I prefer using the Cointreau. I also found it just wee bit too strong using Cuervo cheapo tequila (gasp i know)! Use good tequila, life is too short :)

Great recipe! I just used this for a party and no one wanted any other drink. Super fresh and all the right proportions--don't muck with this one.

To my taste the perfect proportions for two drinks are: 4 oz Reposado (No it isn't brown, but a pale gold) 2 oz Cointreau or Patron Citronge 2 oz lime juice No sugar, no agave syrup, just a simple, classic drink.

Recently agave syrup has become available at our grocery store. I substitued agave syrup for the superfine sugar. This great recipe is now even better. You really get the tequila flavor without the chemy koolaid flavor that you get with mixes or adding too much orange flavored liquor(Conteau, Gran Marne)

I was ready to hate this recipe, as I've always been a 1-1-1 margarita person (equal portions tequila, cointreau, lime juice), but this version is tequila-forward and very drinkable (meaning, dangerous). The only error is the inclusion of reposado (aged 6+ months in oak) tequila. While I love a good reposado, the brown color destroys the look of a margarita. Use a silver/blanco tequila instead (Calzdores is a great pick, IMHO).

I don't use sugar either. Sometimes for a change i'll add a splash of orange juice. Or I'll use Cointreau for a richer, sweeter flavor than triple sec. I LOVE Margaritas, it's just too bad that I can't really handle more than 1 . oh ok, maybe 2!

I've made a lower sugar version for my diabetic husband, using Trader Joe's Stevia extract zero-cal sweetener. For myself I use part Stevia plus a little of TJ's organic blue agave syrup--awesome!

Great recipe! I used to sweeten with cointreau which never seems quite right and masked the flavor of the tequila. The superfine sugar is perfect because you can adjust it to taste. The tequila flavor really comes through. I've made it with mescal too.

make sure it is superfine, shake the concoction and strain over ice, that helps with the sugar. Look at either Grand Marnia or cointreau

Forget the sugar! You'll only be sorry. For extra sweetness add more cointreau or triple sec!

Frozen Margarita
Ingredients
- 1 Part Tequila Blanco
- ½ Part Triple Sec
- ½ Part Lime Juice
- 1 Slice Lime
How to mix
Fill a blender with crushed ice. Add all ingredients. Blend and pour into a chilled cocktail glass. Garnish with lime.
About Frozen Margarita
The Frozen Margarita has many a story about its origins. While the history is a little icy, one thing that’s history is solid is when the Frozen Margarita machine was invented, which was May 11, 1971, by restaurant owner Mariano Martinez. Basically a converted soft-serve ice cream machine, the original machine is on display at the Smithsonian National Museum of History. Some other facts include: the Margarita was the "Drink of the Month" in Esquire magazine in December of 1953, and further popularized by the Jimmy Buffett song "Margaritaville".

This cocktail is a standout at Jean-Georges Vongerichten's Spice Market restaurant in NYC, where bartenders mix tequila and other classic margarita ingredients with potent ginger-lime syrup. Ingredients
- 1 teaspoon ground ginger
- 2 teaspoons kosher salt
- Ice
- 3 tablespoons añejo tequila
- 1 1/2 tablespoons Ginger-Lime Syrup
- 1 tablespoon Cointreau
- 1 teaspoon fresh lime juice
- 1 lime wedge, for garnish
How to Make It
On a plate, mix the ground ginger and salt. Moisten the rim of a margarita glass with water and dip the rim in the ginger salt to coat.
Fill a cocktail shaker with ice. Add the tequila, Ginger-Lime Syrup, Cointreau and lime juice and shake well. Strain the drink into the margarita glass, garnish with the lime wedge and serve.

Classic Margarita Recipe
Our favorite version of the classic tequila cocktail. [Photograph: Vicky Wasik]
The perfect margarita is all about fresh, crisp flavors barely tempered by triple sec and sugar. After testing all the ratios, this is the one we reach for.
- A good quality tequila needs no sugar to balance the acidity of lime juice beyond triple sec.
- Cointreau makes for a balanced, smooth margarita without taking away from the tequila.
Note: This recipe works best with a high quality tequila. If you're using a budget brand that's a little harsh, swap the proportions for the Cointreau and lime juice and add 1/4 ounce simple syrup to each drink.
- Yield: Makes 2 drinks
- Active time: 5 minutes
- Total time: 5 minutes
Ingredients
- Lime wedge, plus 2 lime wheels for garnish
- 1 tablespoon coarse salt, for glass rims
- 4 ounces high quality blanco tequila (see note above)
- 2 ounces Cointreau
- 1 1/2 ounces fresh juice from 2 limes
Directions
Run lime wedge around the outer rims of two rocks glasses and dip rims in salt. Set aside.
In cocktail shaker, combine tequila, Cointreau, and lime juice. Fill with ice and shake until thoroughly chilled, about 15 seconds (the bottom of a metal shaker should frost over).
Fill glasses with fresh ice and strain margarita into both glasses. Garnish with lime wheels and serve.
