4 Florida Spirits You Should Be Using in Cocktail Recipes

The cocktail bars to enjoy them in and the recipes you need to make them at home

Florida has been flooded with local breweries over the last few years resulting in a slow rebranding of the state as one to be taken seriously when it comes to craft beer. Now we're seeing a rapid rise in quality, small-batch distilleries bringing us to a new level of notoriety in the world of cocktail industry trends. Handmade, craft spirits are taking center stage at cocktail bars around the state and locals are proudly supporting the movement. We've rounded up a few of our favorite spirits and drink recipes from some of Florida's best cocktail bars—mix one up after a long day at work or make them for friends at your next cocktail party.

Manifest Distilling Potato Vodka

In 2016, Jacksonville welcomed a newcomer to the game, Manifest Distilling. Vodka kicked off the product line, followed by an organic gin. The company is growing quickly and they'll be offering rye and barrel-aged gin soon. Manifest boasts a completely American-made product which includes their grains and distillation equipment. The neutral potato-based gluten-free vodka is noticeably clean and the team takes pride in working with Idaho-grown potatoes—striving to soon supply locally from Hastings, Florida (the potato capital of our state). Guided tours of the 9,000-square-foot distillery are available, though reservations are recommended. It seemed fitting that we look to Kurt Rogers, beverage director at one of Jacksonville's most popular cocktail bars, Sidecar. He delivered with something special and supplied us with a vodka recipe that's summery, exotic and fun.

St. Augustine Distillery New World Gin

St. Augustine Distillery

Operating out of a beautifully restored ice plant originally built in 1907, St. Augustine Distillery began making vodka in 2014 and has slowly expanded the product line with the addition of new world gin, double cask bourbon, and pot-distilled rum. Free tours are held daily where you can experience the process of mashing and distilling up close. We reached out to bartender Zach Lynch of The Ice Plant, the farm-to-table restaurant that sits beside the distillery, known for their handcrafted cocktails and the detailed ice creations that compliment their exceptional beverages. Zach provided us with a gin-based cocktail, The Phosphorescent, that we absolutely love. The gin is smooth with a pointed tartness of Florida citrus to balance the botanicals, making it superbly thirst-quenching in warmer months.

Palm Ridge Reserve Whiskey

Palm Ridge Reserve

Travel about an hour north of Orlando and you'll find the small town of Umatilla. Located on a quiet cattle farm, sits the distillery for Palm Ridge Reserve. In 2008, this truly small-batch operation began producing a 90 proof, young Florida Bourbon-style whiskey. By 2010, they were publicly distributing and today they've grown their arsenal to include rye as well as virgin, an un-aged white whiskey. Southern whiskey enthusiasts may be quick to dismiss a product outside of Kentucky but you'll want to give this one a try. This spirit teases the tastebuds with notes of sweet, locally grown corn and toasted rye used in the mash. Wood chips from Florida orange trees are blended in during the barreling process, leaving the whiskey with hints of Florida citrus delightfully laced throughout. The complex result makes it ideal for mixed cocktails but also leaves a smooth, premium mouthfeel to hold its own when served on the rocks. Mike Smith, bar manager at The Imperial in Sanford, is a big fan of Palm Ridge and uses it often to make a whiskey smash.

Papa's Pilar Dark Rum

Influenced by famed author and the embodiment of free spirits, Ernest Hemingway, Papa's Pilar rum began its journey in 2013, billing itself as a "spirited rum fit for an adventurer." The dark rum has been hailed as having a taste that's uniquely its own. Carefully selected rums from Florida, Central America and the Caribbean — places Hemingway was known to spend his time — are collected and unified before it is solera aged in bourbon, and port wine barrels. The final step to its maturity is a master blend and one more rest in Spanish sherry casks. The payoff is a rich sip, with a subtly sweet and earthy impact on the palate. As one might imagine, it's a robust rum, channeling Papa's charisma. Contact Papa's Pilar for more information on how you can visit the recently opened distillery in Key West. Lead bartender Jillian Cohen at Miami's Blackbird Ordinary, uses Papa's Pilar to mix up a sophisticated tropical cocktail—one that beckons the salty sea air, just like the Pilar.

Florida Keys Wedding Signature Cocktail: Blue Ocean

While lounging at Morada Bay Café this past weekend, I came across a gorgeously tropical blue drink - the Blue Ocean.

Made with blue curacao, vodka and grapefruit juice, it's an easy-drinking, slightly sweet/tart, bright Caribbean blue cocktail. Don't you think it would make the perfect signature drink for a wedding in the Florida Keys (or anywhere, really)? Here's the recipe:

Blue Ocean

1/2 oz. blue curacao

1/3 oz. grapefruit juice

1-2 splashes simple syrup

Add all ingredients to a shaker filled with ice; shake,

then strain and serve either straight up in a martini glass

or over ice. Garnish with an orange slice & tropical flower.

We thought our drink needed a pretty little sign to go with it. So we typed it up, added a blue wave icon, and printed it on a crisp white card stock; it's mounted here onto a grass-cloth paper, but it would also look amazing in a white, bamboo or wood frame.

This may be a dumb question but What is simple syrup? This looks delish

Simple syrup is a standard drink sweetener – used as an easier alternative to trying to mix/dissolve sugar in cold liquid. Just take 1c. sugar and 1c. water, bring to a boil, lower heat and simmer until the sugar is completely dissolved. It will keep in the fridge for a few months.

This may be a stupid question but in the picture it looks like a pretty big glass. Even of you add Ice, a small 2-3 oz drink will not fill the cup. How do you make it to fill the larger glasses? Do you just double the recipe?

WAY too strong. I used a third less of the vodka and it was still super strong and not in a good way. It just didn’t have much flavor :(

The Wicked Mary, Boston’s on the Beach

Already a local favorite, Boston’s on the Beach recently launched a new breakfast menu that features creative dishes like the p+b+j waffle along with this truly “wicked” bloody mary. Your morning pick-me-up cocktail is filled to the brim with vodka, San Marzano tomatoes, pure-squeezed lemon and celery juices, balsamic vinegar, freshly grated horseradish and gray Celtic sea salt and spice. Then, it’s rimmed with Old Bay seasoning and garnished with a colossal shrimp, pepper jack cheese and red piri piri pepper-stuffed olives ($10). It makes for a zesty wake-up call.

Pumpkin Spice Martini, BiG City Tavern

It’s fall, and everything from your coffee to your household aromas are pumpkin-themed—so why not your happy hour, too? Order the Pumpkin Spice Martini ($10) at Big City Tavern on Las Olas Boulevard during its limited time on the menu. Liquor 43, half-and-half, house-made pumpkin puree and whipped cream vodka congregate under a foamy film you’ll wear above your lip. The Kuro, Kuro

The Kuro cocktail ($13) is intimidating, but there’s a reason it takes the same name as the restaurant itself. Kuro means “black” in Japanese, so mixologist Jared Boller uses squid ink and black sesame seeds to mask two types of rum, lime juice and pineapple. Boller categorizes this cocktail as an “umami” flavor, which translates to “pleasant savory taste.” We concur, and suggest you enjoy it with the Chocolate Hazelnut Bar for dessert.

Save the drama for your drink. Tanzy’s Champagne Crush ($18) arrives in a chilled martini glass spewing liquid nitrogen. But it isn’t all for show. The cocktail by master mixologist Adam Seger is as decadent as its presentation, assembled with Grand Marnier, Grey Goose Le Citron, ginger beer, lime, agave and MOET Imperial. Take it with you, and enjoy a movie at the iPic Theater just upstairs.

Between mouthfuls of corn tortilla chips topped with guacamole and chapulines, or grasshoppers—yes, grasshpppers—sip the Calle Fresca Margarita ($12) at Dos Caminos. You shouldn’t find any critters in this margarita at the modern Mexican restaurant in the B Ocean Resort on Fort Lauderdale Beach, but the surprise factor is still there. The Blackberry Mojito, Dada

This funky, eclectic restaurant just steps from Delray’s energetic Atlantic Avenue is so popular that reservations are a must. The crowds come to this historic-home-turned-restaurant for both the award-winning new American cuisine and the inspired cocktail menu that centers around the rum-based mojito. The star of the show is the bluish-purple blackberry mojito ($11) that’s served with Conch Republic Silver Rum and fresh blackberries. Muddled all together with fresh mint sprigs, limes and homemade simple syrup, it makes for one decadent sip after another.

OaxacaN Mistress, Max’s Harvest

This popular farm-to-fork restaurant is all about sustainability, but that doesn’t end with the food. The artisanal cocktails are made with fresh ingredients, including the smoky and flavorful Oaxacan Mistress ($14)–Illegal Mezcal, Ancho-Reyes Liqueur, local tangerine, smoked jalapeño and cilantro. For an after-work treat, head to Max’s Harvest from 5 p.m. to 7 p.m. for its daily happy hour that features half-off drinks and $5 snacks. For Sunday Funday, don’t miss the unlimited interactive bloody mary and Champagne cocktail bar for $15.

Kentucky Radler, Hyde Kitchen + Cocktails

Even non-whiskey lovers will enjoy the Kentucky Radler ($14)—a whiskey-based cocktail made with freshly pressed lemon juice and house-blended maple syrup, and topped with Corona beer. If you’re looking for round two, the drink menu at the new Hyde Kitchen + Cocktails in Hallandale Beach is stacked with creative concoctions like Beet the Heat and Love Unit. For a group outing, try the Pinky’s up Punch—a bowl-sized cocktail made with Absolut vanilla vodka, apple juice, passion fruit puree, syrup and served with a full bottle of prosecco sparkling wine ($140).

If you haven’t stumbled across this hidden gem located just a few blocks from Atlantic Avenue in Delray Beach, make it a point to do so. The Victorian-style bed & breakfast is listed on the National Register of Historic Places. Sundy House offers an extensive Sunday brunch buffet where patrons can dine al fresco amid the inn’s lush botanical gardens. For an afternoon drink, we recommend staking out a spot at the Atrium Bar for a handcrafted cocktail created by resident mixologist Matt Swig. Our pick for fall? The Spiced Pumpkin Old-Fashioned ($11) made with Highwest Double Rye, house-made autumn spiced sugar, angostura bitters, organic maple bitters, black walnut bitters and pecan pumpkin butter.

The last place you want to be during happy hour is the office—or so you thought. Atlantic Avenue’s The Office celebrates happy hour from 3 p.m. to 7 p.m. and 10 p.m. to 2 a.m. daily with special prices on cocktails, like the Water Cooler, comprised of Nolet’s silver gin, fresh cucumber, lemon juice and sweet gomme. This restaurant created quite a stir when it opened on Las Olas Boulevard last year. Now that everyone’s comfortable saying the name, the restaurant has gained quite a following for its decadent meatballs and lively bar scene. One of the restaurant’s most popular handcrafted cocktails, the Fork ’n Berry Fizz ($10), features Grey Goose vodka, M&R Prosecco, Luxardo Limoncello, strawberries, basil and simple syrup. Poured into a martini glass, it’s a luxe and gorgeous-looking drink.

It’s hard to choose just one of the 12 Pisco infusions at SuViche on Las Olas. The Peruvian-Japanese restaurant recently expanded north from its first location in Brickell in Miami. With it comes a full Pisco bar, serving the Lemongrass Pineapple Orange Pisco Cocktail ($10) crafted with lemongrass macerado, pineapple juice, orange juice, lemongrass juice, simple syrup and lime juice.

The Bad Boys of Rum Distilling

Avi Aisenberg and Joe Durkin of South Florida Distillers are breaking the rules and making their own rum right at home in Fort Lauderdale. Here, they give us the 4-1-1 on spirits and their own specialty rum titled FWAYGO.

When did you both first get into distilling?

AVI: It started for me back in the beginning of 2012 on my move back home to take over a family business that was in South Bay. … I was always raised in an environment where my father had his own business, and in running the family business, I kept thinking, “What can I do for myself?” I saw all the sugarcane around me, I was actually doing recycling for the sugar mills. . So I wanted to see if it was possible.

JOE: I went to the Rosen School of Hospitality Management at the University of Central Florida, so I was studying restaurant food service. I have always wanted my own bar, a simple bar and grille sort of thing. . At Rosen I took as many beer and wine and beverage classes as I could. . Like Avi said, when he moved home he wanted to start a distillery, I was like, “I’m totally on board.” With Avi being able to build the equipment, we were able to make some pretty cool stuff.

Is there a certain process that you use that is unique to your rum?

JOE: I like to tell people [that] “I’m not in the alcohol production business, I am in the fine spirits business.” So, one of the things that makes us different is I’m not actually bottling all of the alcohol. There’s something called cuts, and there’s heads, hearts and tails, and you only keep the heart. So, we are only bottling about 30 percent of our alcohol production. We actually won best in class at the Rum Renaissance Festival in Miami for premium white rum on our first batch.

What should people look for in an ideal rum?

Joe: One of the best things about rum is that there are so many different kinds. . Unlike bourbon, where you have to follow a specific set of orders, as long as you’re making [rum] with sugarcane, that’s really the only requirement. So, our white rum is unaged and unfiltered. There’s a lot of rum out there that’s filtered and aged to make white rum and it’s good, there’s nothing wrong with that. … I don’t like rules. So that’s one of the reasons rum is so great. You could pretty much do whatever you want. As long as you’re starting with sugarcane, it’s rum.

What is the best way to prepare a rum cocktail?

JOE: One thing with rum and most cocktails is that you want to have three things: sweet, strong and sour. And that’s why with a daiquiri, you have the sweet with the sugar, the sour with the lime and the strong with the rum. . I think the best way to test a rum is by making a daiquiri.

"How Much Additional Entertainment Do I Need?"

Most parties are 4-5 hours long and break into the 2 parts, the Cocktail Hour & the Main Reception. The Cocktail Hour is the first hour of your party. There is often light food & drinks, but nothing to really keep your guests entertained. The DJ or Band usually plays background music and if your Cocktail Hour is in a separate room there is no dancing. Most people book at least 1 type of keepsake (Ex. Green Screen Photos) and a few games (Ex. Air Hockey Table) for Cocktail Hour to keep the kids busy. Keepsake(s) are often booked for the whole party b/c they don't interfere with the DJ, guests go over and take a photo and then go back to the party. Games are usually booked just for the cocktail hour, and then it is the DJs job to entertain the kids for the rest of the party. One exception is a 'kids-only' party, we recommend keeping the games for the whole party as an alternative form of entertainment if the kids don't want to dance. We understand the DJs job can be tough for some groups of kids so if the games are booked the entire party we are happy to close them down at important times for the DJ like the Grand Entrance or a kids game.

Answer: Yes, we do not believe in bait & switch, it is unethical, immoral, and wrong!

Answer: No, we would arrive at 5 pm so we are set up before the party starts. If we are taking photos then we would stop taking photos at 9 pm, but we'd continue working until every photo taken is finished for the guests to take home.

Answer: Our staff are experienced and professional. Our staff know they are not one of the guests! They will not stand around and eat or drink your food. Our attendants are clean cut and wear "Event Staff" shirts, Referee shirts, or Black Polo shirts. We can also customize our attire based on your theme. (Ex. Sports Jerseys). We do not employ 14 year olds, people covered with body piercings or tattoos, nor "ghetto" looking staff.

Answer: Yes, we own our games and therefore can give better pricing and service.

Answer: Yes, we save the photos taken at every party and upon request we will email you a link to download them directly to your computer.

Answer: Yes, most of our game rental packages include at least 1 attendant. Our attendants watch and maintain the games (provide spare ping pong balls, foosballs, air hockey pucks, etc. ) and they make sure the kids take turns and behave appropriately. They can also wear referee shirts upon request.

Answer: Yes, we either digitally print them on the photos or print them on stickers that go on the back of every picture frame.

Answer: Yes, most parties start in the cocktail hour room for the first hour, and then we move our equipment into the main party room. There is no charge for this. This happens at about 90% of our BAR MITZVAH & BAT MITZVAH parties.

Answer: Our warehouse is in West Palm Beach, Florida, but we can travel anywhere. If you book any package over $2500 we usually waive all travel fees. If you want to book a small package then there will be a travel fee based on what options you book. We will not travel outside south florida for any packages under $1000.
