Ginger Beer and Ginger Ale Cocktail Recipes
Ginger ale and ginger beer add a refreshing spice to mixed drinks
Ginger ale, and its spicier, fermented cousin ginger beer, are ideal cocktail mixers. The effervescence lightens up a summery highball, while the ginger's bite tames spirits. We've rounded up our favorite ginger ale and ginger beer cocktail recipes.
Ginger ale and ginger beer can both be purchased, but it's fun and easy to make them on your own. For ginger ale, simply make a syrup out of water, ginger, sugar, and a dash of black peppercorns, then mix it with soda water. To make ginger beer, brew up a similar ginger mixture and add in spices and champagne yeast. Strain the mixture, bottle it, and after a day of fermentation you have your very own ginger beer!
Whether you make or buy, you've got delicious recipes to try. The Moscow Mule is a classic mix of ginger beer and vodka. If you steep the vodka with lemongrass and grapefruit to make aquavit then you have a variation called a Swedish Mule, while swapping the vodka out for gin and adding a little mint makes a Gin-Gin Mule.
The Dark 'N Stormy is another classic ginger beer cocktail, with black rum and ginger beer swirling together like storm clouds. The Black and Stormy is a variation that kicks up the spice with ginger liqueur.

Inspired by our list of Friday cocktails, bartender Michael Neff noticed that bitter flavors were prominent, as were fizzy drinks made with fresh fruit and herbs. To that end, he created a modified Pimm's Cup, using Cynar to add a bit more bitter tang and ginger beer for spice. Fresh fruit and herbs round out the (almost) traditional summer refresher.
By trademark, this Bermudan combination of rum and ginger beer requires Gosling's Black Seal Rum; similar drinks with names like dark 'n foggy or light 'n stormy use other rums.

Foghorn Recipe: Where Gin and Ginger Beer Meet
- 3 mins
- Prep: 3 mins,
- Cook: 0 mins
- Yield: 1 serving
The Foghorn is one of the great classic cocktails that the Waldorf-Astoria Hotel in New York City made famous. Traditionally made with Old Tom gin, modern interpretations have resorted to a London dry gin like Beefeater.
The Foghorn is incredibly easy and it's highly recommended to try it in the original style with Old Tom and ginger beer, as it is quite fascinating. Yet, all options for this drink (Old Tom vs. London Dry and ginger beer vs. ginger ale) are very refreshing.
This drink is similar to a Gin Buck and when the Foghorn is made with ginger ale, the lime juice is the only difference between the two drinks. The ginger beer is an exclusive option for the Foghorn. Yet, no matter how you take it, there's no denying that the Foghorn is a great happy hour drink.
What You'll Need
- 2 ounces gin (or Old Tom Gin)
- 1/2 ounce fresh lime juice
- 4 ounces Ginger ale (or ginger beer)
How to Make It
- Pour the gin and lime juice into an ice-filledold-fashioned glass.
- Stir well.
- Top with ginger beer or ginger ale.
- Stir gently.
- Garnish with a lime wedge and stir stick.
The Foghorn can also be made as a highball drink by serving it in a tall glass.
Which Gin Should You Choose?
There are many great bottles of gin in the world and the Foghorn is a perfect drink for almost any gin you have in stock.
London dry gin will still be the most popular and that is where the popular brands like Beefeater and Tanqueray come in.
If you'd like to save a little money, Gordon's is always a great choice among the budget-friendly options.
Just like the Gin & Tonic, it's hard to find a gin that doesn't work in the Foghorn. Go ahead and pour whatever you like.
More Obscure Gin Highballs
Admittedly, the Foghorn is not the best-known mixed drink. It is a fun one, though, especially if you're a Moscow Mule fan and want something just a little bit different.
There are a few more gin highballs that combine gin and soda which you will also want to try.
- Gin-Gin Mule - Muddle a lime wedge with mint and syrup, add gin, then top with ginger beer. This is a modern cocktail created by Audrey Saunders.
- Dragonfly (or Prohibition Cocktail) - Skip the Foghorn's lime juice and use champagne instead of the soda.
- Leap Frog - Same as the Foghorn but uses lemon instead of lime juice.
How Strong is the Foghorn?
Like most gin and soda drinks, the Foghorn is relatively mild when compared to other cocktails. With an 80-proof gin and served as a lowball, this drink has an alcohol content of right around 14% ABV (28 proof). If we serve it tall and double the soda it becomes a tame 9% ABV (18 proof).
