Ginger ale and ginger beer add a refreshing spice to mixed drinks
Ginger ale, and its spicier, fermented cousin ginger beer, are ideal cocktail mixers. The effervescence lightens up a summery highball, while the ginger's bite tames spirits. We've rounded up our favorite ginger ale and ginger beer cocktail recipes.
Ginger ale and ginger beer can both be purchased, but it's fun and easy to make them on your own. For ginger ale, simply make a syrup out of water, ginger, sugar, and a dash of black peppercorns, then mix it with soda water. To make ginger beer, brew up a similar ginger mixture and add in spices and champagne yeast. Strain the mixture, bottle it, and after a day of fermentation you have your very own ginger beer!
Whether you make or buy, you've got delicious recipes to try. The Moscow Mule is a classic mix of ginger beer and vodka. If you steep the vodka with lemongrass and grapefruit to make aquavit then you have a variation called a Swedish Mule, while swapping the vodka out for gin and adding a little mint makes a Gin-Gin Mule.
The Dark 'N Stormy is another classic ginger beer cocktail, with black rum and ginger beer swirling together like storm clouds. The Black and Stormy is a variation that kicks up the spice with ginger liqueur.

Non Alcoholic Moscow Mules

I love Moscow Mules. They are amazingly delicious, so refreshing, and perfect for cocktail hour. I love the flavor so much, I wanted to come up with a delicious version I could drink during way more often than I care to have alcohol and serve at parties with friends who don’t drink. It’s also the perfect mocktail when you’re pregnant- the ginger beer helps calm
This recipe for Non Alcoholic Moscow Mules is something you’ll want to have anytime!
So, here’s the thing… if you’ve enjoyed a mule at a restaurant or bar, you know they come in ADORABLE little copper cups. But they can be kind of pricey. If you’re into them, you can find some good deals all over amazon, or even at williams sonoma, west elm, or other specialty kitchen store. I’m not photographing this drink in the copper mug because I haven’t found one with the shape I love for under $30 something a mug- and you wouldn’t really see the drink in it. So no going off on how I don’t have the proper mug for this… they really do taste better in the mugs, but it’s not a practical thing to buy if you’re on a budget.
You might not ever have had ginger beer – which isn’t alcoholic– but you should give it a try! It is much more ginger-y and spicy than ginger ale. Ginger ale is NOT a substitute for ginger beer in this recipe- it will be far too sweet and won’t have the bite that ginger beer has.
If you aren’t a drinker, you might not have a shot glass… but they are really practical for measuring liquids into ounces. You can find some online or in stores with a wide selection of glassware that are stainless steel and less frat-boy looking.
Concentrated lime juice is easy, but fresh lime juice tastes the best. You can find some lime juice with simple syrup in it with other drink additions like grenadine. You can also try this recipe with lemon juice for a different citrus flavor!
This recipe is for one person. If you’re making it for a large party, add ingredients for every 1 1/2 people who will be drinking this. Also, be sure to make ginger beer-lime juice ice cubes if you’re making a big batch. It will keep the drink from being really watered down. If you’re making just one for yourself, go ahead and use regular ice.
- 1 ounce lime juice
- ½ cup cock n bull ginger beer (or bundaberg ginger beer)
- 1 tablespoon simple syrup
- 2 ounces sparkling water, tonic or club soda
- (to be alcoholic, add 2 shots of vodka)
- ice cubes- 3 to 5 depending on your preference (a little lemon and ginger beer in the ice cube slots works well to keep the drink from getting watered down)
- Add all ingredients in a glass and stir well.
- Garnish with a slice of lime and a small slice of ginger.
- Don't use a shaker for the non alcoholic version- all the sodas will cause too much carbonation!
- For the Alcoholic Version-
- Add all ingredients and stir well.
- Omit sparking water/soda/tonic
- Garnish with a slice of lime and a thin slice of fresh ginger
- Pour into glass and stir in ginger beer.

Natural Ginger Ale

For hundreds of years (and probably much longer) cultures around the world have made various forms of naturally fermented “sodas” from sweetened herbal teas or fruit juice mixes. These natural fermented drinks contained beneficial enzymes and probiotics to boost health and were a far cry from the unhealthy versions we have today.
This version uses a fermented ginger culture to create a naturally fizzy soda! Ginger is and delicious herb that has been used in many cultures for its health-boosting properties. From my herb profile of ginger:
Ginger has been used in Chinese Medicine for thousands of years and is said to help:
- Soothe digestive disturbances
- Alleviate nausea (great in early pregnancy)
- Reduce fever
- Calm coughing and respiratory troubles
- Stimulates the circulatory system
- Helps relieve muscle aches and pain
- Can help get rid of dandruff
- Emerging evidence shows it helps lower cholesterol
- Japanese research has found Ginger is effective in lowering blood pressure and cancer risk
This natural recipe for ginger ale uses fresh ginger and a cultured ginger mixture (called a ginger bug) to create a naturally fermented and naturally fizzy ginger ale. Though this mixture can contain a small amount of alcohol if left to ferment at room temperature for weeks, we use the short brew method to create a fizzy soda without the alcohol.
Homemade ginger ale is soothing for digestive disturbances and contains probiotics and enzymes. As with any fermented product, I’d suggest starting with a small amount (4 ounce or so) and working up as all the probiotics and enzymes can cause an upset stomach in those who aren’t used to consuming fermented products. I found small amounts of this mixture helpful in early pregnancy to ward off nausea and any time one of us has an upset stomach. It also just tastes great!
This recipe makes 2 quarts of natural ginger ale, though the recipe can be adjusted up or down by using a ratio of 1/4 cup sugar per 1 quart of water and adding 1/4 cup ginger bug starter per quart of water.
Natural Ginger Ale

A naturally fermented old-fashioned ginger ale (also once called Ginger Beer) that contains beneficial probiotics and enzymes.
Ingredients
- A 1-2 inch piece of fresh ginger root, minced. Adjust this to taste. I use 2 inches as I prefer a stronger ginger taste.
- 1/2 cup of organic sugar or rapadura sugar. if using plain sugar, add 1 tablespoon molasses for flavor and minerals.
- 1/2 cup fresh lemon or lime juice
- 1/2 tsp sea salt or himalayan salt
- 8 cups of filtered (chlorine free) water (Here is the water filter we use)
- 1/2 cup homemade ginger bug (or can use 1/4 cup whey for a faster recipe though the flavor won't be quite as good. Here is a tutorial for how to make whey)
Instructions
- Make a "wort" for your ginger ale by placing 3 cups of the water, minced ginger root, sugar (and molasses if needed), and salt in a saucepan and bringing to a boil.
- Simmer the mixture for about five minutes until sugar is dissolved and mixture starts to smell like ginger.
- Remove from heat and add additional water. This should cool it but if not, allow to cool to room temperature before moving to the next step.
- Add fresh lemon or lime juice and ginger bug (or whey).
- Transfer to a 2 quart glass mason jar with a tight fitting (air-tight) lid. Stir well and put lid on.
- Leave on the counter for 2-3 days until carbonated and transfer to the fridge where it will last indefinitely.
- Watch this step carefully. Using whey will cause it to ferment more quickly and it will take less time. It should be bubble and should "hiss" like a soda when the lid is removed. This is very temperature dependent and the mixture may need to be burped or stirred during this fermentation time on the counter.
- As with any traditional fermented drink, it is more of an art than a science as it depends on the strength of your culture, the temperature of your house and the sugar used. The final mixture should smell of ginger and slightly of yeast/fermentation and should be fizzy. Watch carefully that it doesn't become too carbonated as this will cause too much pressure and may result in an exploding jar!
- The mixture can be strained and transferred to Grolsch style bottles before putting in the fridge (we like these bottles).
- Strain before drinking.

Dark and Stormy
Great stories have invariably started with a Dark and Stormy night, but this classic cocktail is so refreshingly delicious it’s perfect for a mild and sunny afternoon too! It’s the national drink of Bermuda and just quietly we think it’s the cocktail of choice for Australians too.
Probably because of the dark rum – long associated with sailors, Dark and Stormy is also the official drink of the yachting fraternity. Another reason might be because it’s so easy to make..
Like most cocktails, the composition of Dark and Stormy depends on the temperament, taste and resources of the Mixologist. What’s 100% essential though is the quality of the ginger beer used.
