Ginger ale, and its spicier, fermented cousin ginger beer, are ideal cocktail mixers. The effervescence lightens up a summery highball, while the ginger's bite tames spirits. We've rounded up our favorite ginger ale and ginger beer cocktail recipes.

Ginger ale and ginger beer can both be purchased, but it's fun and easy to make them on your own. For ginger ale, simply make a syrup out of water, ginger, sugar, and a dash of black peppercorns, then mix it with soda water. To make ginger beer, brew up a similar ginger mixture and add in spices and champagne yeast. Strain the mixture, bottle it, and after a day of fermentation you have your very own ginger beer!

Whether you make or buy, you've got delicious recipes to try. The Moscow Mule is a classic mix of ginger beer and vodka. If you steep the vodka with lemongrass and grapefruit to make aquavit then you have a variation called a Swedish Mule, while swapping the vodka out for gin and adding a little mint makes a Gin-Gin Mule.

The Dark 'N Stormy is another classic ginger beer cocktail, with black rum and ginger beer swirling together like storm clouds. The Black and Stormy is a variation that kicks up the spice with ginger liqueur.

2 oz. fresh lime juice

1.5 Elijah Craig Small Batch Bourbon

1 1/4 oz. fresh carrot juice

1 oz. fresh orange juice

1/2 oz. fresh lime juice

3/4 oz. Homemade Red Bell Pepper, Ginger & Chili Syrup

Garnish with Cajun seasoning, crushed mixed peppercorns and course sea salt, with a hint of lime zest—mixed together to create a fine powder. Cajun and butter baby corn. Lime wheel, fresh ginger & red pepper (last one optional).

*Simple syrup: To make simple syrup, bring equal parts sugar and water to a boil in a small saucepan, stirring until the sugar dissolves. Cool and chill.

Fever Tree Ginger Beer

Recipe from Cynthia Tran, Beverage Director at Tratto, San Francisco, California

3/4 oz. fresh lemon juice

1 large egg white

2 oz. gin, preferably Plymouth

1/2 oz. crème de cacao

1.5 oz. chilled heavy cream

1.5 oz chilled ginger beer

1 orange twist, for garnish

1 750 ml bottle of white wine

3 cups apple cider

3/4 cup light rum (clear rum)

3-4 medium apples (colorful combos look and taste great together)

3 2-inch orange peels

4 3-inch cinnamon sticks

2 tsp. whole cloves

1 tsp. whole allspice

2 12-oz. bottles of ginger beer or ginger ale

If desired, remove fruit and pour mixture through a fine-mesh sieve to strain out the spices and orange peel. Discard spices and orange peel and return liquid and apples to the pitcher. Personally, I like having the cloves and allspice bob around in each glass, so I don’t strain, but you do have to be careful to dodge the whole spices when drinking it.

Pour liquid into glasses about halfway. Add apple slices until glass is about 3/4 full. Top off with ginger beer. Serve with a straw.

2 oz. blood orange juice

Juice from 1 wedge of lime

3 oz. ginger beer

1/4 cup blood orange juice

zest from one blood orange

1/4 cup granulated sugar

Slices of blood orange for garnish (optional)

Dip the rim of a glass into juice first and then into the sugar mixture to coat the rim evenly. Fill the glass with ice.

In a cocktail shaker, combine 1 cup of ice with 2 ounces blood orange juice, 1.5 ounces tequila, and the juice from a lime wedge. Shake vigorously. Pour into the prepared glass and top off with desired amount of ginger beer.

5-Ingredient Ginger Beer Margaritas

Friends, I have been eagerly awaiting the day that I could share this recipe with you.

It is hands down the recipe I am most excited about this month! No, really! Even more than all the desserts (even the cheesecakes) I’ve shared, I am absolutely smitten with this drink! You simply must make it. Promise me this.

This drink is simple – as always – with flavors that were seemingly meant for each other: Ginger beer, simple syrup, fresh lime juice, tequila, and salt for your rim (a must).

When it comes to your tequila, go for something quality. As in, not Jose Cuervo Gold, which I was recently informed is not really tequila (I’ve been lied to all these years and it hurts.) We went with a brand called Altos (no affiliation or partnership, just pure adoration) and we love it.

Just remember, the key to picking a good tequila is: Make sure it’s made with 100% agave. Then you’ll know it’s higher quality and made with the good stuff. This will ultimately affect the quality of your drinks.

This recipe is so easy to make. Just lime your rim with lime juice and salt and then add all of your ingredients with ice to a large glass or cocktail shaker and stir (as to not erupt your ginger beer – lesson learned). Then pour over more ice, garnish with lime, and stir.

What does it taste like? Seriously the best margarita I’ve ever had. And I’ve had a lot of margaritas! (Don’t worry mom, I’m not a drunk – I swear. I just like ritas.)

John and I both loved that they showcase the tequila well and don’t overpower it. And they go perfect with any and all Mexican dishes, which is great because we eat some form of tacos at least twice a week. Hello fajitaville and nacho soup.

Simply put: Make these margaritas.

You will love them – I have no doubt. Unless, that is, you don’t like ginger beer. And if that’s the case, GET OFF MY INTERNETZ. (Kidding but not kidding, ok kidding, but really? Who are you?) Cheers!

  • 1 1/2 ounces (3 Tbsps) 100% agave tequila (such as Altos)
  • 1 ounce (2 Tbsp) fresh lime juice
  • 3 ounces (6 Tbsp) ginger beer
  • 1/2 ounce (1 Tbsp) simple syrup
  • optional: Coarse salt for lining rim
  1. Line a small serving glass with fresh lime juice and dip in coarse salt (optional).
  2. Add tequila, simple syrup, ginger beer and lime juice to a large glass or cocktail shaker with 1/2 cup ice and stir vigorously. Don't shake with a lid on or it will erupt from the ginger beer carbonation (lesson learned).
  3. Pour liquid (reserving ice) into serving glass with a few ice cubes (we just ordered this oversized ice cube mold and LOVE it). Garnish with a lime wedge and serve immediately. Repeat for more drinks, or double/triple the amounts for more people.

Dana! These are gorgeous, and the flavors sound like perfection. I always find straight-ahead ritas to be a little too strong – I usually add a bit of fizzy water, but ginger beer?! Be still my heart. I also don’t care for orange liqueur in ritas, so these look perfect for me. Also, aren’t Fentiman’s sodas the best? I could live on their rose lemonade.

I just waanted to recommend the FEVER TREE Ginger Beer – tried them all but feel like this one really adds to the complexity of these margaritas!! My friend made me ginger ritas recently and I cannot stop obsessing over them because they are amazing! She used Fever Tree….

Fever Tree is my favorite ginger beer for this recipe, too. The drink has turned out great regardless of the type of ginger beer but I agree that it is even better with the above brand (for whatever reason)! LOVE this recipe.

I’m so glad someone else feels this way! Fever Tree is really the only way to go. Unfortunately, I’m having the darndest time finding it since moving to the East Coast. Even when I do find a rare store that carries their brand, they don’t have the ginger beer, only the tonic. After many disappointments I have found Maine Root to be the most acceptable substitute for Fever Tree. It’s the only one I’ve found to have an equally good gingery bite. Unfortunately, it has twice the sugar as Fever Tree. So, I omit the simple syrup and find it works well with this recipe. Thanks for a great recipe!

Sarah, Not sure where you are on the East Coast, but Safeway grocery stores and some Walmart stores carry Fever Tree brand, though I recall the ginger beer being out of stock when I looked in Walmart. Maine Root is a different, but addictive new friend. I enjoy the bite and find it much less sweet than D&G, the original Jamaican ginger beer.

I made Moscow Mules recently and loved them but I also enjoy tequila occasionally so these would be the perfect swap.

Tip for lightening them up: Use Zevia Ginger soda instead of Ginger beer. I made my moscows with both and seriously did not notice the difference.

It is technically tequila but brands (such as Jose Cuervo) don’t use 100% agave in their products, which means there are some fillers in there that make them less authentic. The main tip I learned recently is to make sure the tequila you choose is 100% agave. Hope that helps!

Good question! 1 part sugar to 1 part water. Bring it to a low simmer in a saucepan until well combined, then cool and bottle. That’s it!

My wife is an extremely lightweight drinker. A single glass of wine is fine, two glasses and she needs assistance.

She absolutely loved these. Tempted as I was to put the pedal to the tequila metal, I stuck to your recipe and they were glorious.

At $1 a kilo for extremely fresh, ripe limes, I was looking for something to have as an aperitif before our chick-pea curry, and this just hit the spot.

I love Ginger Beer cocktails: Moscow Mule, Dark and Stormy, and top of the list is the Suffering Bastard (gin, bourbon, lime juice, ginger beer, bitters, it’s great, try it, honeslty, even if you don’t care for bourbon).

I also love Margaritas, so when I had a case of ginger beer, and Googled “ginger beer cocktails” this baby popped up, and I had to try it. I had never thought to put ginger beer in a Margarita.

I tried it as is, and I did like it, it was good! But I do like some Cointreau in my ‘rita, and I like to taste the tequila a little smidge more (if it’s a good tequila).

Now, my fiancé tells me I shouldn’t make up my own drinks/make them on the fly/doctor up a recipe, because I’m apparently, typically, terrible at it if I don’t strictly follow a recipe. But hey, he wasn’t home tonight! So, I did it anyways.

So I upped it to 2 oz of tequila, added 0.5 oz of Cointreau.

Whoops! TOO strong!

So I added 1 more oz of ginger beer to soften it just a tad, for a final of:

0.5 oz Cointreau

1 oz lime juice

4 oz ginger beer

And I must say, ginger beer in a ‘rita is seriously genius. GENIUS. Thank you, thank you. I love you. (don’t tell my fiancé)

I will definitely be trying this!! A Moscow Mule introduced me to ginger beer which I LOVE so I’m eager to see how it will be in a margarita which is my favorite drink.

As with most drinks I tried decreasing or eliminating the sweetener and topping with Cointreau! Wonderful.

Awsome! I’ve had ginger margaritas at restaurants but didn’t think to use the ginger beer I have for Moscow mules for margaritas at home. I also use Fever Tree.

Also I had some Hornitos Black Barrel (100% Agave, Anejo Tequila, aged in whiskey barrels) in my liquor cabinet and I have to tell you that hint of whiskey and ginger playing back up to lime and tequila… So good!

This is delicious! I too found this while googling. Couple things–your tequila is actually called Olmeca Altos, and it’s wonderful. One of the things high end tequilas use in their process is crushing the agave with a tahona, which is a giant, usually horse-drawn millstone. Clearly, this adds to the final cost. Half of the juice Olmeca Altos uses is treated this way, so you get the benefit of the artisanal method for less money. Also, ginger beer mixes beautifully with every kind of booze. Tequila, vodka, rum, gin, bourbon, pisco, all delicious. I’ve not yet tried cognac, but I bet it’s great too. My favorites are gin and rum, especially Jamaican rum like Appleton Estate or (be still my heart) Smith & Cross. Lime is classic, but lemon can be good too. Lightly muddled herbs make a nice addition too, I love mint and basil. Also, don’t be afraid to dash some bitters in there. Last week I mixed ginger beer with applejack, lemon juice, and hopped pear bitters, and it was like a totally different drink than anything I’ve ever made. I haven’t yet tried Fever Tree (though their tonic is my favorite) but my favorite ginger beers are Barritt’s and Reed’s. Reed’s also makes a raspberry ginger beer that’s hard to find but so worth hunting down. One last thing–home brewed fresh ginger beer is super easy if you have a juicer, and it’s really yummy.

You use a little honey and hot water to make a simple syrup that way. It will be a lot of healthy then using regular sugar. Also maple syrup works too.

I love ginger beer and use it for a lot of my cocktails, was looking for something like this and it definitely didn’t let me down at all. Well balance and you get that nice bite from the ginger beer. I would also suggest that you could mix all of the other ingredients in, then top off with the ginger beer, then give it a little stir. You won’t lose some of the fizz of the ginger beer. Though either way, the drink is going be great. Excellent recipe!

This recipe is delicious! I just tried it out because I was thinking of serving it at my cousin’s bridal shower this weekend. I’m a fan, and I’ll definitely be serving this at her party.

For my personal taste, I probably would not add simple syrup, as I think ginger beer is sweet enough. And I might do more tequila (don’t judge me!) and a little less ginger beer. If I’m using decent tequila, I really like to taste it. I also think the more lime, the better.

All Tequila is made from Blue Agave as the rule. Anything made with just Agave is Mescal.

If a Moscow Mule and a Mexican cutie Margarita had a baby, this would be their darling! Enjoyed this concoction on the deck tonight as we were grilling our pizza. It is FANTASTIC! M any beer enthusiasts, like oenophiles and Scotch lovers, believe in the purity of their drink and don't welcome dilutions. Let them live in their gated communities. More open minds, and palates, recognize the simple pleasures of a Black and Tan (combining stout/porter and lager/ale) and a Snakebite (hard cider and lager). The whole is greater than the sum of its parts in each of these cases. The union of flavor begets a wholly original taste sensation. This has not been lost on better bartenders, who have been experimenting with beer in recent years. In addition to making the aforementioned classics, they're going to beer for effervescence, much like cocktails calling for a touch of Champagne or ginger ale. For this roundup, we chose to focus on beer-forward beverages that prove the stubborn purists wrong. The following drinks include some oldies-but-goodies, a few reinterpretations, and a couple of brand-new cocktails created by the nation's top mixologists. Hoppy days are here again.

Liquor-Free Cocktails like the Black Velvet

The most common beer "cocktails" contain no hard alcohol at all, they are simply equal parts of two types of beer or cider layered on top of each other in a pint glass. This includes a dark stout like Guinness with a light-colored ale in the Black and Tan, and lager beer and hard apple cider in the Snakebite. We'd also put the Black Velvet in this category, a mix of stout and Champagne best poured as follows: Fill glass halfway with bubbly, then pour stout over a spoon, slowly, to create a layered effect.

Fries and beer are an obvious (Belgian-inspired) pairing, but Champagne's bubbles work well with fatty foods too.

The meaty oils in this breakfast casserole beg for the richness (and carbonation) found in sweeter sparklers and beers.

Happy Mich

The Michelada is a refreshing cocktail, originally from Mexico, made with beer, lime juice, and hot sauce, served in a salt-rimmed glass over ice. Cocktail consultants The Tippling Brothers created several variations of the Michelada, including the Happy Mich, for Mercadito restaurants in New York. It retains the spicy/soothing format of the original beer cocktail, and brings some interesting hot seasonings, cooling watermelon, and hibiscus flavors into the mix.

Both cocktail and chips feature lime, spiciness, and salt. The crispness of the chips offers a textural counterpoint.

The hot salsa and chili powder in the dish match the drink's heat; the beer stands up to the strong cilantro, cumin, onion, and cheese flavors.

Popular in the U.K., where it's also known as a Shandygaff, this drink mixes equal parts beer with either ginger ale, ginger beer, or carbonated lemonade (some folks even use Sprite or alcoholic sodas like Smirnoff Ice and Mike's Hard Lemonade). If the drink has multiple sources of alcohol, it's called a TurboShandy. In the following recipe from Gourmet, fresh lemonade and mint are used instead of bottled products.

The light, lemony shandy pairs perfectly with spicy food. Try it with any hot Asian dish, such as this noodle salad.

The lemonade in the shandy makes it a go-to choice for barbecues; the chicken recipe can be prepared year-round.

Bartender Gina Chersevani developed this cheeky beer cocktail as a "cure" for the economic recession: It sells for the discounted price of $5 on her menu at PS 7's in Washington, DC. It combines a light, value-priced beer such as Miller High Life with a splash of juice and ginger liqueur.

Light beer and lemon will take the heat off these classic chicken wings.

The ginger in the drink is spicy like the mustard in the recipe and holds its own against the smoky meats in the sandwich.

The Stout Diplomat

Yanni Kehagiaras of San Francisco's Nopa restaurant created this dessert drink for a beer-cocktail competition. "The rum is in there to give this short beer cocktail a bit of a punch," he says. You could make it with a white rum instead of a dark or aged one and still focus on the beer, but the Diplomatico rum that Kehagiaras favors offers a caramel flavor and slight sweetness (instead of a spicy or funky rum) that seems less likely to clash with food flavors. The approach, like the drink, is likely to win fans on both sides of the beer/cocktail divide. It's a smart drink with wide appeal, befitting its name.

Kehagiaras designed this cocktail to be a dessert drink, but the weight and flavor of the stout will also stand up to the salt and oil of fish and chips.

Pairing a chocolate dessert with a chocolate dessert cocktail may seem like too much, but that's never stopped any chocoholics we know.
