Absinthe-based cocktail recipes

Shake well with cracked ice. Strain into cocktail glass.

I n 2007, the U.S. government reversed its 95-year-old policy, once again allowing the sale of liquor products labeled absinthe into the country. Since then a slew of old and new brands hailing from France, Switzerland, Austria, and America have hit the market. All of them have less than ten parts-per-million thujone, the compound in wormwood that's dangerous in high doses but considered safe (and certainly nonhallucinogenic) at these small levels.

Many people do not realize that absinthe tastes like anise, fennel, or licorice, depending on your frame of reference. But bartenders do. They've been using it (and substitutes like Pernod and Herbsainte) in cocktails for more than a hundred years. Below are five cocktails that feature absinthe in different ways: as a primary flavor, as a rinsing agent, and even as breakfast.

Abinsthe Frappe

Absinthe is usually very high in proof, clocking in at nearly 70 percent alcohol compared with 40 percent for most vodka, gin, and whiskey. It needs water to bring it down to drinking strength. That's the concept behind the Frappe, an easy way to transform the well-known Absinthe Drip into an iced drink. To make the basic Drip, simply add an ounce of absinthe to a glass, set a sugar cube atop a slotted spoon over the glass, and slowly drip icy cold water over the cube until it dissolves. Those absinthe fountains that you see in old pictures are full of cold water, not absinthe, and allow boozers to dilute the drink to their preferred level. The absinthe in the glass will "louche," or turn cloudy. Add three to five times as much water as absinthe, to taste.

A rich cheese like goat cheese works well with absinthe, and the onions accentuate the spirit's savory herbaceousness. .

The bold flavor of absinthe can stand up to steaks, burgers, and other hunks of meat. With this spicy tuna steak, the soft anise flavor is downright soothing.

Death in the Afternoon

What could be more decadent than absinthe and Champagne? Absinthe and Champagne and oysters. Death in the Afternoon is not only the name of a Hemingway book, it's also the author's name of a drink he contributed to a book of celebrity cocktail recipes in 1935. His instructions are: "Pour one jigger absinthe into a Champagne glass. Add iced Champagne until it attains the proper opalescent milkiness. Drink three to five of these slowly." I heartily recommend drinking less than five of these, and you may also try pouring the absinthe on top instead; some brands of absinthe will float for a time on the Champagne, and this makes a nifty visual effect.

Both this decadent oyster dish and the Champagne cocktail contain absinthe—and loads of history.

Champagne works well with grilled or smoked salmon, and the fennel in absinthe matches the herb rubbed on the fish.

Chrysanthemum

The Chrysanthemum Cocktail, adapted here from the classic Savoy Cocktail Book, is an unusual combination of dry vermouth, the liqueur Benedictine, and absinthe. Each of these ingredients has many herbs or spices as part of its recipe, and it's pretty amazing they don't clash when they come together. In absinthe, the three flavors most brands have in common are anise, fennel, and wormwood, though different varieties add everything from mint to stinging nettles.

The herbs and spices in the Benedictine—including juniper, myrrh, saffron, aloe, arnica, and cinnamon—would taste great mixed into the sliders.

Strong flavors like pecorino cheese and peppercorns demand an equally complex and savory set of flavors, as found in the Chrysanthemum.

Absinthe Sazerac

Absinthe has a very strong flavor in addition to its high alcohol content, so most recipes don't call for very much of the alcohol. A large number of cocktails including the Sazerac, Corpse Reviver #2, and even some tiki drinks call for just a rinse of absinthe. It is poured into the glass, swirled, then discarded. But it still adds a layer of complexity, especially in the aroma, to the final cocktail. Use Peychaud's bitters if at all possible.

This pairing plays with the duality of the rye (in whiskey and twists), fennel (in absinthe and bread), and citrus (in drink and food).

A good Sazerac is a little sweet, but the rye whiskey is spicy. Reduce the sugar in the drink to better pair with the creamy Gorgonzola sauce in this dish.

Absinthe Suissesse

In this cocktail, absinthe is paired with orgeat, an almond-flavored syrup. The egg white and cream give the drink a frothy, milkshake-like texture. (As with wormwood in absinthe, the danger of raw eggs in cocktails can be exaggerated.) In New Orleans, many people consider this a breakfast drink.

Absinthe FAQs and Cocktails

What is Absinthe?

Absinthe is an anise-flavored spirit that was originally 136 proof and made with grande wormwood. It is typically made by distilling neutral grain spirits with herbs, predominately anise, florence fennel and grande wormwood. Other herbs such as angelica root, coriander, dittany leaves, hyssop, juniper, nutmeg, melissa, star anise, sweet flag, and veronica are also used.

The color of the distillate is clear and is often bottled this way in a style known as Blanche or la Bleue or as a bright green.

The coloring is added, either through the chlorophyll from steeping herbs like hyssop, melissa and petite wormwood in the liquor or adding artificial coloring. Other absinthes are available in red or blue hues.

Absinthe in History

This potent liqueur was outlawed in many countries for years following multiple instances of harmful effects and even deaths of its drinkers, most of which were due to over indulgence of the green spirit. Since the 95 year absinthe ban was lifted in the United States in 2007, many brands have been released with lower thujone levels. During the bans homemade absinthe kits became popular, however this can be dangerous. For instance too much wormwood or the use of wormwood extract can be poisonous.

There have been a number of famous absinthe drinkers throughout time, most notably among artists and other creatives in the 19th century. Pablo Picasso, Edgar Allen Poe, Arthur Rimbaud, Ernest Hemingway, and Oscar Wilde made this list and absinthe is often found or has influenced their work.

Possibly the best known absinthe imbiber was Vincent Van Gogh, who drank it for years (presumably addicted to it), painted still lifes of absinthe, and some believe he was under its influence when he cut off his ear.

Absinthe Facts

  • Absinthe brands range in alcohol content, though you will rarely find one below 90 proof. Most absinthe falls in the 90-148 proof (45-74% ABV) range.
  • Abisante, Anisette, Pernod and Herbsaint are often used to replace absinthe in cocktail recipes.
  • Absinthe is commonly classified as a liqueur, however it does not contain any sugar and is actually a liquor.
  • Absinthe is also known as absinth and the 'green fairy.'
  • National Absinthe Day is March 5.

Since the shift of legality regarding absinthe we have seen many brands become available throughout the world. These are just a few:

Drinking Absinthe

It is not recommended to drink absinthe straight because of its potency and pungent taste. Consider it fair warning that if you do take a straight shot of absinthe, you may not taste anything else for a day or two.

A better way to drink absinthe is to use the preparation often called the absinthe ritual. It is a far more gentile option that involves water, a sugar cube and specially designed spoons and glasses.

Absinthe Cocktails

There are many great absinthe cocktails available. When mixing with absinthe it is important to remember that the anise is a strong flavor and it is recommended to measure its portion according to the recipe.

Also, be sure to properly clean any bar tools that have contained absinthe as the flavor and smell can remain for quite some time and taint other, non-absinthe drinks.

Absinthe recipes - how to mix and drink absinthe

THE CZECH ABSINTHE RITUAL

Pour a shot of Absinthe in a small tumbler. Take a teaspoon of sugar. Dip the teaspoon into the absinthe so that the sugar absorbs the liquor. Then, holding the spoon above the absinthe, set light to the sugar. Let it burn for a minute or so. The sugar will bubble and begin to caramelise. Once the flame is beginning to die down, stir the shot of absinthe with the sugared spoon (smothering the glass if it catches alight). Now add an equal measure of water and some ice if required.

Absinthe is very flammable. Please be careful when performing this ritual!

ORIGINAL ABSINTHE SERVING RECIPE

The original absinthe recipe: first you pour roughly three ounces of absinthe into a heavy parfait-style stemmed absinthe glass. A perforated absinthe spoon is set upon the rim of the glass and on the spoon is placed a cube of sugar. Ice-cold water is ever so slowly dripped from a glass carafe onto the cube. The sugar dissolves and you continue pouring until the ratio of absinthe to water is about two to five parts, depending upon your taste and fortitude. Give the absinthe drink a spin with the spoon and drink like you dripped - slowly.

1/4 Absinthe Original

1/2 tablespoon sugar

Shake well and pour into cocktail glass.

12.5 ml Absinthe Original

This Absinthe Cocktail is a true classic cocktail and can be found in many of the first bartending books including those by "The Professor" Jerry Thomas.

I have adapted this recipe from the 1887 printing of Thomas' Bartenders Guide and it is a great way to taste all of the absinthe that has been reintroduced to the market after the ban was lifted.

Absinthe is the main ingredient and the Absinthe Cocktail is one of the purest ways to enjoy it. This recipe is very similar in taste and effect as the traditional method of drinking absinthe using a sugar cube and absinthe spoon.

I find it interesting that anisette is also used because it doubles the anise flavoring. If you are going to try this drink, you really need to enjoy that black licorice flavor that is anise.

The other thing you will notice is that this is a very short drink, coming in at just over 2 ounces. However, it is a powerful one in both taste and effect.

  • Discard the Absinthe after the rinse
  • Stir all ingredients with ice and strain into glass

Mixed Berry Collins

  • Ingredients
  • 40 ml Hapsburg Blackberry Liqueur
  • 20 ml fresh lime juice
  • Muddled mixed berries
  • 50 ml soda water
  • 10 ml gomme
  • Mix
  • Mix all berries and gomme in a cocktail shaker

  • Ingredients
  • 10 ml Hapsburg 72.5% Absinthe
  • 30 ml Hapsburg Apple Liqueur

  • 160 ml sparkling grapefruit juice

  • Add Hapsburg and fresh lime juice to a tall glass

  • 40 ml Hapsburg Apple Liqueur

Liquorice Espresso

  • Ingredients
  • 40 ml Hapsburg Liquorice Liqueur

  • 1 dash Angostura Bitters
  • Mix

6 Absinthe Cocktails to Lose Your Mind Over

Today, March 5th is National Absinthe Day in the U.S. Its became officially re-legalized back in 2007 after being banned in 1912. Absinthe is a much discussed and controversial spirit. It has been said to have contained hallucinogenic properties that have affected the creativity of such well known artists as Vincent Van Gogh, Henri de Toulouse-Lautrec and Oscar Wilde amongst others.

1. Violent Femme

  • 1 oz absinthe
  • 1 oz raspberry liqueur
  • 1 oz sour mix
  • 2 oz ginger ale
  • lemon wedge

Combine absinthe, raspberry liqueur, sweet & sour mix in a cocktail shaker with 3-4 ice cubes. Shake vigorously for a few seconds, then strain into a tall glass filled with ice. Garnish with a lemon wedge.

2. Hypnosis

  • 1 oz absinthe
  • 1 1/2 oz Hpnotiq
  • 1/2 oz sour mix
  • 2 oz lemon-lime soda
  • lemon wedge

Fill a glass with ice. Add absinthe, Hpnotiq, sour mix and lemon-lime soda. Garnish with a lemon wedge.

3. Van Gogh`s Garden

Muddle the cucumber, kiwi and simple syrup in the bottom of a rocks glass. Add ice, then absinthe and top with club soda.

4. Southern Spell

Combine absinthe and peach schnapps in a cocktail shaker with ice. Shake vigorously, then strain into a highball glass full of ice. Add peach wedges as garnish.

5. Absinthe Madtini

Combine ice, absinthe and vodka in a cocktail shaker. Shake vigorously then strain into a chilled martini glass. Garnish with a twist of lime.

6. Green Lantern

  • 1 oz absinthe
  • 1 1/2 melon liqueur
  • splash of ginger ale
  • 2-3 lime wedges
  • 1 lime spiral

Muddle the lime wedges in the bottom of a rock glass. Add ice, then absinthe, melon liqueur and a splash of ginger ale on top. Garnish with a spiral of lime.

Absinthe Drink recipes and Mixes

It is amazing the number of absinthe cocktails recipes that can be found from European countries where the beverage never was banned. Since a standard "shot" means 1 to 1.5 ounces of liquor, Europeans decided that banning was not necessary because most of these drinks use a very small amount of absinthe.

Those countries considered that civilized people drink absinthe for the flavor, not to get stoned or run to kill someone. Absinthe, "Absinth" (name given to the low-quality version) and pastis-type liquors such as particularly Herbsaint, and liqueur d'anis made in New Orleans are intensely flavored vibrant and good excuse to socialize. In any case, you may substitute absinthe for Pernod, Ricard, Herbsaint, or any pastis you like.

The following is a non-exhaustive list of popular cocktails you may try, just mix and "а votre santй":

Genuine Absinthe Drip

Pour 1.5 oz of absinthe in a drip glass or old fashioned cocktail glass, placing a cube of sugar in a drip spoon and pour cold water to fill. Wait until the water has dripped through before drinking.

The Absinthe Cocktail

1.5 oz absinthe, .75 oz water, .25 oz anisette, 1 dash orange bitters.

The Absinthe Special Cocktail

1.5 oz absinthe, 1 oz water, .25 teaspoon powdered sugar, 1 dash orange bitters.

Mix .75 oz dry gin, .75 oz dry vermouth, .5 oz absinthe, 1 teaspoon white "crиme de menthe".

1 oz Brandy, .5 oz dry vermouth, .5 oz Sweet Vermouth, .5 teaspoon curaзao, .25 teaspoon absinthe.

1.5 oz dry gin, .75 oz sweet vermouth, .25 teaspoon absinthe.

The Ladies' Cocktail

1.75 oz whiskey, .5 teaspoon absinthe, .5 teaspoon anisette, 2 dashes bitters.

1.25 oz sherry wine, 1.25 oz dry vermouth, .25 teaspoon absinthe, 1 dash bitters.

White of one egg, 1 teaspoon absinthe, 1 teaspoon sweet cream, 1.5 oz dry gin.

New Orleans Dixie Cocktail

Juice of 1/4 orange, 1 oz dry gin, .5 oz absinthe, .5 oz dry vermouth.

1.5 oz Dry Gin, .75 oz dry vermouth.

1.5 oz whiskey. .75 dry vermouth. .25 teaspoon absinthe, .25 teaspoon maraschino, 1 dash bitters.

Other cocktails are more elaborated or simple but equally tasteful which include these recipes:

1 shot absinthe, matches, still water, 1 teaspoon caster sugar.

Pour a shot of absinthe into drip glass or old fashioned cocktail glass. Dip a teaspoon of sugar into absinthe until soaked. Light the teaspoon and then stir caramelizing sugar into absinthe, then lighting the glass. Extinguish glass by topping off with chilled water.

1 shots tequila, 1 shot white rum, 3 shots absinthe, advocate.

Get a 1 pint glass and fill half way with crushed ice. Add one shot of tequila. Shake well, then add one shot of white rum and shake again, End with three shots of absinthe. Light the cocktail with a lighter to burn it quickly. Extinguish the flames and add a pinch of lemon juice and a hint of nutmeg.

Royal Absinthe Fizz

1 shot absinthe, 1 glass champagne.

Pour the shot of absinthe into a champagne flute and top up with more champagne.

3 shots absinthe, 1/2 shot orgeat syrup, chilled still water.

Mix grenadine and absinthe together in a tumbler or old fashioned glass. Add ice cubes and top up with chilled water.

Half a shot of baileys, half a shot absinthe, 1 shot whiskey.

Layer in order in double shot glass baileys, whiskey and then absinthe.

10 ml grenadine, 20 ml sambuca, 15 ml "crиme de menthe", 15 ml bols blue, 10 ml absinthe.

Pour in a cocktail glass, layers of grenadine first, then sambuca, then creme de menth, then bols blue, last absinthe. By following the procedure correctly, all ingredients should be separate and the appearance will be red the first layer, clear the second, green the third, blue the forth and pale green the fifth layer.
