World's top 100 cocktails

Words by: Simon Difford

As in previous years, the following ‘Top 100 Cocktails from 2016’ are based on a combination of the number of visits to individual cocktail pages on this website, frequency of appearance on cocktail menus in bars in Europe, North America and Asia, and search engine stats.

From nearly 4,000 cocktails on Difford's Guide, the Porn Star Martini continues to reign while the previously dominant Mojito has declined for a second year. All manner of ginger beer-charged Mules continue to do well, as do gin based cocktails. It is also good to see so many Scotch whisky cocktails in the top 100.

We've not included any in the top 100 but non-alcoholic cocktails are also on trend.

1. Porn Star Martini - the most visited cocktail on Difford's Guide for a second year. Proof that either sex sells or folk like vanilla flavoured vodka and passion fruit.

2. Amaretto Sour - the 2nd most visited cocktail on Difford's Guide during 2016 and one of the best-selling cocktails of 2016. We recommend Morgenthaler Formula

3. Margaritas and Tommy's Margaritas - continue to drive tequila sales. Tommy's Margarita receives more hits than the classic Margaritas (straight-up, on-the-rocks and frozen) on Difford's Guide.

4. Bramble - gin's popularity across Europe helps push this contemporary classic by the legendary Dick Bradsell.

5. Espresso Martini - the second drink from Dick Bradsell in the top 10. Not actually a 'Martini' at all but this stimulating cocktail is fabulous all the same (yes I know it should be called a 'Vodka Espresso' but consumers love the word 'Martini').

6. Moscow Mule - we noticed a huge resurgence for this drink during 2015 and it has continued to climb, as has every flavoursome derivation of Mule. The Mexican Mule (see below) was actually the 5th most visited cocktail on Difford's Guide during 2016 while the classic Moscow Mule only made it to 47th place.

7. Old-Fashioned - we've also taken the Maple Old-Fashioned and Benton's Old-Fashioned serves into account to bring the Old-Fashioned into the top ten for another year.

8. Negroni - It is now more than just bartenders who enjoy this easy to make bitter-sweet drink - we think now more than the Aperol Spritz below which seems to be declining.

9. White Lady - this vintage classic continues to rise up this chart, perhaps helped by the popularity of gin.

10. Manhattan - We've combined Dry, Perfect and Sweet serves to bring the Manhattan in at No. 10, but the Sweet Manhattan is by far the most popular on Difford's Guide (the 17th most visited cocktail during 2016).

11. Dry Martini - the various styles of Martini such as Vodkatini and Vesper combine to push the Dry Martini near the top of our chart. The Vesper leads the Martini pack on Difford's Guide at 29th of all cocktails during 2016.

12. Daiquiri - the Hemingway Special helps drive the combined Daiquiri category and this is presently the most popular style of Daiquiri on Difford's Guide at 14th most viewed cocktail during 2016.

13. Mai Tai - commonplace on bar menus around the world, helped by the Tiki revival. (Trader Vic's recipe is by far the most popular on Difford's Guide and the 16th most viewed cocktail during 2016.)

14. Aviation - this gin classic was the 22nd most viewed cocktail on Difford's Guide during 2016, up two places from 2015 but it was 15th in 2014.

15 . Penicillin - this whisky-based cocktail was the eighth most viewed on Difford's Guide during 2016 and we saw it in many more bars. This is a cocktail to watch.

16. Spritz - we've grouped Aperol Spritz and Spritz al Bitter together but while Aperol previously led, the drier Campari 'Spritz Al Bitter' now receives more than twice as much traffic on Difford's Guide.

17. French Martini - not actually a Martini and perhaps driven by sales of Chambord liqueur, this fruity drink has wide appeal. Try a Very French Martini with cognac.

18. White Russian - popular since its 1998 cameo appearance in The Big Lebowski this drink appears to be enjoying a resurgence.

19. Dirty Banana - helped by a One Direction blog referring to Harry Styles, this continues to be one of the most visited cocktails on Difford's Guide.

20. Mexican Mule - Summer 2016 saw the Moscow Mule climb in popularity and with it variations such as this tequila based mule.

21. Sazerac - Louisiana's official state cocktail is now also being enjoyed elsewhere in the world.

22. Cantaritos - the 13th most viewed cocktail on Difford's Guide during 2016 is spreading its influence from a strong Mexican base.

23. Martinez - of the many recipes with genever the Martinez is by far the most popular on Difford's Guide

24. Screaming Orgasm - the Porn Star Martini isn't the only lewd named cocktail that proved popular during 2016. Screaming Orgasm was our 15th most viewed cocktail.

25. Mojito - the Mojito has dramatically fallen out of favour and during 2016 it was the 76th most viewed cocktail on Difford's Guide. Flavoured variations remain popular and interestingly a non-alcoholic Apple Mojito was our 59th most viewed cocktail. Non- and low-alcohol cocktails are seeing dramatic rises. That said the classic Mojito remains a much requested bar drink. However perhaps opt for a Royal Mojito with champagne rather that soda - this was our 149th most visited cocktail (out of nearly 4,000 recipes).

26. Vieux Carré - another cocktail from New Orleans. Surely bartender driven.

27. Gin Fizz and Ramos Gin Fizz - shaker boys at the ready, the Ramos was the 19th most viewed cocktail on Difford's Guide during 2016, up from 29th in 2015.

28. Whisky Mac - it's great to see this old Scotch whisky based cocktail doing so well. Our 20th most viewed cocktail during 2016.

29. Pickle Back - one of the most popular shots of 2013, left the top 50 during 2015 but came back in 2016 to be our 21st most viewed drink.

38. Caipirinha - the 2016 Olympics helped drive this cocktail.

40. Breakfast Martini - this drink has inspired many other marmalade/jam cocktails.

42. Slow Comfortable Screw Against The Wall - While bars strive to write highfalutin menus with sophisticated drinks made using house-made ingredients, it would appear many consumers are looking for something a lot more basic. This was the 15th most visited cocktail on Difford's Guide during 2016.

43. Jack's Godfather - Jack Daniel's is one of the world's best-selling spirits brands, people love the almondy taste of amaretto, and they like cola. This drink has all three, a combo that helped make it the 17th most viewed cocktail on Difford's Guide during 2016.

47. Bloody Mary - An incredibly popular cocktail in North America and the UK, and even on aeroplanes making the transatlantic crossing between the two. However, it is less popular elsewhere and languished at 146th place on Difford's Guide during 2016.

48. Irish Coffee - perhaps due to the popularity of Irish whiskey we noticed a jump in this warming drink's popularity.

49. Snowball - such was the popularity of this drink over Christmas 2016 that we felt it deserved a place in the top 50. The first recipe we link to was the 23rd most viewed cocktail on Difford's Guide but predictably I much prefer my own Snowball recipe.

50. Collins - flavoured variations led by the Elderflower Collins are propelling the popularity of this tall refreshing cocktail

51. Alaska - we have two recipes for Alaska on Difford's Guide but the Savoy Recipe is the most popular

54. Cosmopolitan - Still lingering on but now out the top 50.

59. French 75 - we've also noticed the elderflower based French 77 doing well (it's our 175th most viewed cocktail).

60. Mint Julep - a great drink served in a fancy tin. Given the rise of American whiskies this will surely continue to grow in popularity.

61. The Alexander - leads numerous creamy variations with the Brandy Alexander - and the vodka-based Alexander the Great also heavily hit on Difford's Guide.

62. Russian Spring Punch - yet another Dick Bradsell cocktail in the top 100.

64. Bellini - given the present popularity of Prosecco we'd have expected better of the Bellini

70. Singapore Sling - we've included stats for the Gin Sling in our placing of the Singapore Sling.

79. Ace - who'd have guessed this pink gin drink was so popular?

100. Corpse Reviver - of the various recipes it is the No.2 (Savoy Recipe) that is by far most popular on Difford's Guide

About this recipe

You can tell the Old Fashioned is a turbo-charged classic because it has a glass named after it. It’s one of the few cocktails, like the Martini and the Collins, to be so celebrated.

The Manhattan is another with the dark spirit look that fits the season, but it’s even more suited to parties than the Old Fashioned because essentially the Manhattan is a dark Martini. Like this classic drink, the Manhattan is a late 19th century combination of spirit and vermouth, and, like the Martini it’s served in an elegant v-shaped glass. The aromatics from the fortified wine escape into the nostrils as you drink, stem in hand. Most likely invented in the 1870s by a bartender on Broadway, it’s the number one New York cocktail – apart from, that is, the Cosmopolitan.

It's happy hour again: The 20 most popular cocktails

Published: 22:00 GMT, 17 March 2012 Updated: 22:01 GMT, 17 March 2012

Our illustrations show the 20 most popular cocktails, as chosen by one of London’s finest and most respected mixologists, Salvatore Calabrese.

Don’t be alarmed if they don’t look like this when you make one though – even Salvatore’s skills couldn’t achieve the results shown here.

Rather, we have layered the ingredients of each drink in the glass, thus visually representing their composition.

So you can see at a glance what’s going to knock you out, and what to have if it’s just ‘one for the road’.

Cocktail Menu / List – Aperitifs

In the quest for a well balanced drink menu I have included some basic mint based drinks, some classic cocktails, a few modern creations and then the aperitifs. The standard definition of an aperitif is a an alcoholic drink usually enjoyed as an appetizer before a large meal. It is derived from the Latin verb aperire, which means to open. Many aperitifs have a bitter component to them, but they don’t necessarily need that, but they should be of a dry style and not sweet or creamy. For some good examples of aperitifs, you can read the Mixology Monday summary on aperitifs. For the Mint menu, there are currently four cocktails, with the possible addition of one more.

Diablo Cocktail :: This is the older brandy-based cocktail and not the tequila-based one. This drink is a nicely balanced drink. It combined brandy, dry vermouth, Cointreau, Angostura bitters and orange bitters (Regans’). I’ve done a write up on the Diablo cocktail previously and am quite happy with this cocktail.

Negroni :: This is an old Italian classic that combines equal parts Campari, gin and sweet vermouth. This drink will wake up your taste buds and get your saliva glands pumping. The nice thing about this aperitif is that no single component takes centre stage, they al share the spotlight and complement one another while doing so. This isn’t a drink for the cocktail neophyte, so if you are just approaching bitterness in your exploration of the cocktail flavour spectrum, try the Diablo first.

French 75 :: No aperitif menu would be complete without a champagne (sparkling wine) cocktail. The champagne cocktail is the classic aperitif, but the French 75 is another get one. It’s named after an artillery piece from World War I and is a combination of gin, lemon, simple syrup and champagne. In our case we will be substituting prosecco for the champagne.

Manhattan :: Now most people don’t consider a Manhattan an aperitif, but for sure it is. In its purest form it combines rye, sweet vermouth and bitters which sounds like an aperitif to me. Why put a Manhattan on the menu? For starters it’s a great drink and I intend to make them extremely well. Secondly, many people forget to order them. Unless you are a die-hard Manhattan fan it can slip your mind when you are presented with a cocktail menu, wine list and dining menu. It’s like being a kid in a candy store; you are so overwhelmed you forget what you came for.

I’m leaving spot No. 5 open for now, but when I find something modern and creative I’ll put it on the list. Unfortunately I haven’t had a lot of time to do the research, so all suggestions are appreciated.

On a side note, I like the suggestion by James Dorsey about adding the Whisky Smash to the cocktail menu. I’ll see how the Mint Julep moves and if it is slow, I’ll replace it with the Whisky Smash. Thanks for the suggestion.

Part IV of the cocktail menu will discuss the Digestif or Night Cap selections.

Top 10 Classic Cocktails

Friday has arrived again, so I have decided to do a cocktail list. I am a great fan of cocktails and have many a messy cocktail evening. In this list I will introduce you to the best version of each recipe for 10 classic cocktails. The recipes come from my own experience based upon my education in cocktails courtesy of some incredible cocktail bars and David A. Embury, the author of the finest book on cocktail making: The Fine Art of Mixing Drinks. I strongly urge any person interested in cocktails buy his book – it is unsurpassed. This book is so sought after that you will rarely find a copy for less than $200 US (it is a basic paperbook format). Fortunately for two lucky people, it is currently available on Amazon for $120 and $161 (both are used but good condition). You can buy them here.

Aside from glasses, you will need some kind of hard object for squashing fruits in the glass (this is called a muddler). You will also need a cocktail shaker (a large lidded jar will do if you can not get a cocktail shaker), a tall glass, a stirrer, and a strainer. This is what they look like:

Some things to note about cocktails: a true cocktail will never include milk or cream. Additionally, none of the cocktails below use vodka as the aim of a cocktail is to enjoy the flavored spirit and vodka is a raw spirit – if you must have vodka, stick to a a vodka and orange – don’t waste expensive cocktail ingredients by mixing them with this bland spirit.

One final word of advice: the images in this list are almost all over-garnished – please use the instructions in the list, not the images as a guide for the finished result. We are trying to make fine drinks, not fruit bowls. Oh – and I challenge each of you to try at least one of these cocktails this weekend!

1 tablespoon sugar syrup

Juice of 1 medium lemon

3-4 ounces of gin (2 measures)

Stir all of the above together in the Tom Collins glass (see image above) and add 4 ice-cubes. Fill with soda water, stir again, and serve immediately. If you use Old Tom Gin (see below), use half the quantity of sugar syrup.

Originally a Tom Collins was made with Old Tom Gin which is a sweetened type of gin. Unfortunately it is not seen often these days so we have to substitute regular gin and sugar syrup 1 . A collins is served in the tallest glass used for cocktails which is, appropriately, named a Tom Collins glass. It will normally hold 12-16 ounces.

In a tall bar glass (this is not used for serving – just mixing) put 1 tablespoon of sugar syrup, a dozen young mint leaves, and 2 or 3 dashes of angostura bitters. Bruise the mint gently with a muddler and blend the whole mix by stirring and pressing slightly (do NOT use a blender). Do not crush the mint leaves or it will release bitter juices. Pour 2 ounces of Bourbon over the top.

Remove julep glasses from the refrigerator and fill with crushed ice (being careful not to touch the glasses with your bare hands. Pour the julep over the top and stir for a few minutes. Add some more ice and top with enough Bourbon to fill the glass to 1/4 inch from the top. Insert two long straws and decorate with sugared mint leaves and serve.

Everyone has their own take on the julep (particularly the mint julep) so it can be very controversial to present a recipe as the “best”. Nevertheless, I think after tasting you will agree with this one.

1 teaspoon of sugar syrup

2 teaspoons of lemon juice

3 ounces of gin

Combine the ingredients in a goblet or highball glass. Fill the glass with chilled soda water. If you wish, you can omit the lemon juice, but I recommend keeping it. This is now ready to serve.

The generic term sling refers to a drink made of sweetened spirits and water. You can substitute virtually any spirit for gin in this recipe to produce a whiskey sling, a rum sling, a brandy sling, etc.

7. El Presidente

1 part French vermouth

1 dash of grenadine

Put all three ingredients in to an old fashioned glass (an old fashioned glass is the type of glass you normally serve a whiskey on the rocks – “old fashioned” here does not mean antique,) with large cubes of ice. Drop a twist of orange peel (and optionally a cherry) on to the top and serve. NOTE: many people mistakenly think that grenadine is a raspberry liqueur – that is not correct. Grenadine is made from pomegranates and you should not substitute raspberry in this recipe.

This recipe is for the “Cuban” El Presidente. There is also an “American” El Presidente which includes lemon juice and curacao.

1 part sugar syrup

2 parts lime juice

8 parts white rum (Bacardi is best)

Shake all of the above vigorously and strain in to chilled old fashioned or cocktail glasses.

Interestingly, this drink was originally called a Bacardi, but the Bacardi company won a copyright suit so the name daiquiri has stuck.

1 teaspoon of sugar syrup

3 dashes of bitters

2 – 2.5 ounces whiskey

Fill small old fashioned glasses with ice and set aside to chill.

Stir the above ingredients with large ice cubes until thoroughly chilled. Empty the old fashioned glasses and swirl a dash of absinthe in each one – discarding any left over liquid. Strain the liquor into each chilled and swirled glass. Twist a peel of lemon over each glass and drop it on top as a garnish. Serve with a small glass of ice water on the side as a chaser.

I have added the Sazerac mainly out of historical interest as it is one of the earliest (and in fact, may be the earliest cocktail known. Due to the combination of absinthe and whiskey, it is not to the liking of many people.

1 part Cointreau (or any orange liqueur

1 part lime juice

Combine the above ingredients in a small old fashioned glass with crushed ice and stir to combine. Serve immediately.

The origins of the Margarita are unknown. What is known is that it is not a drink that is meant to be blended in an electric blender and served like a slushy!

1 part cointreau

2 parts lemon juice

Shake the above ingredients over ice and strain in to a glass of your choice (see below).

These are normally served in a sour or delmonico glass, but you can use a standard cocktail glass. This happens to be my favorite cocktails.

1 part Italian vermouth

5 parts whiskey

1 dash angostura

Stir (never shake) the above in a bar glass with ice. Strain in to a cocktail glass and garnish with a single maraschino cherry – if it does not have a stem, place it on a toothpick.

The Manhattan is normally made with rye whiskey, but you can substitute bourbon if you prefer.

7 parts best quality gin (I recommend Tanqueray No. 10)

This is likely to be the most controversial cocktail on the list as the true martini has been greatly maligned in film and bars all around the world. First of all, let us just clarify a few points. A martini is made with gin. Always. If you use vodka, it is not a “Martini” it is a “Vodka Martini” – only an ignorant person would ask for a martini and complain if it is not made from vodka. Using a twist of lemon instead of an olive in a Vodka Martini, gives you an entirely different drink which is called a Kangaroo.

The second serious issue that needs clarification is that you never shake a Martini. James Bond is wrong – a Martini is always stirred. If you ask for a Martini shaken, you merely show your ignorance. The reason for this is that all white cocktail are stirred – shaking introduced bubbles, introduces too much water, and the shaken wine (vermouth) makes the final result murky. Incidentally, if you absolutely must have it shaken – it is not a Martini, it is a Bradford. Now, on to the recipe. This is the best Martini recipe you will find.

Stir ingredients (don’t stir too vigorously) in a bar glass with ice. Strain in to a chilled cocktail glass and twist some lemon peel over the top (do not put the peel in the drink – just twist it to spray the top with the juices). Serve with one stuffed olive on a toothpick (for some reason it has become fashionable to serve a martini with 2, and sometimes even 3 olives. This changes the flavor of the drink and should not be done).

If you use a cocktail onion instead of an olive, you have a Gibson rather than a Martini.

* Sugar syrup can be made at home by combining equal parts of sugar and water and cooking until the sugar has completely dissolved. It is much easier to use this for cocktails as sugar can be difficult to dissolve in alcohol and you can up end up with grains in your cocktail. When using sugar syrup, you can substitute one for one.
