The Bramble Cocktail: A Modern Classic of Gin and Blackberry
- 3 mins
- Prep: 3 mins,

The Bramble is a modern classic and a simple gin cocktail with a fruity flair. The story goes that it was created in 1984 by U.K. bartender Dick Bradsell and it has been enjoyed by many drinkers ever since. It's also a drink that is open to interpretation, so it's okay if you don't have the exact ingredients in the recipe.
The feature of this enhanced gin sour is the crème de mûre, a blackberry liqueur. Though it is not a common bar ingredient, it is nice to have around for drinks such as this. If you have access to a good crop of blackberries, you might even try to make your own. It's as easy as adding the berries to a standard homemade liqueur recipe.
While the Bramble is a fantastic cocktail, it is completely different than the drink known as the Bramble Bar, which has a scotch base. Both make fantastic summertime drinks and they're actually quite nice to serve together so both your whisky and gin loving guests are satisfied.
What You'll Need
- 1 1/2 ounces gin
- 3/4 ounce lime juice (fresh)
- 3/4 ounce simple syrup
- 3/4 ounce crème de mûre liqueur
- Garnish: lime wheel and raspberries
How to Make It
- Pour the gin, simple syrup, and juice into a cocktail shaker filled with ice.
- Shake well.
- Strain over crushed ice in a highball glass.
- Drizzle the cremé de mûre on top and garnish with a lime slice and two raspberries.
How Will You Bramble?
The Bramble may have a short history, but that doesn't mean that it hasn't been adapted many times. Some recipes will suggest a London dry gin while others opt for the fruitier Plymouth Gin.
You will also find recipes that use either lemon or lime juice. Dale DeGroff uses lime in his recipe in "Craft of the Cocktail" and you will find many other recipes that prefer fresh lemon. If you do switch to lemon juice, use a lemon wheel for the garnish.
I have found that you cannot go wrong with any of these options for either the gin or the juice as this drink is ideal for adapting to your personal taste.
No Crème de Mûre? No Problem
Admittedly, crème de mûre is not the easiest liqueur to find, though it is not impossible. If you're having no luck, there are a few options available.
- Blackberry Brandy - Many fruit-flavored brandies made today have some amount of sugar added to them, which makes them more of a liqueur than a true brandy. That is actually quite convenient because it makes blackberry brandy a viable substitution for the Bramble's crème de mûre.
- Black Raspberry Liqueur - Blackberries and black raspberries have a very similar flavor as do the liqueurs made from the fruits. This means that you can get away with using a black raspberry liqueur like the popular Chambord when making the Bramble.
How Strong is the Bramble Cocktail?
The crushed ice used in the Bramble will melt faster than cubes, but that's okay because the drink needs that extra water. This refreshing cocktail is relatively mild in the cocktail world and weighs in with an average alcohol content of 17% ABV (34 proof).

The Bramble is a blackberry-based cocktail that’s rather simple to make and is nicely balanced in its sweet and sour tones. The cocktail is on its way to modern classic status, if it hasn’t already reached it, frequenting more bars than Ernest Hemingway and Oliver Reed combined.
This is a drink best reserved for the end of summer, when that big yellow ball hangs lower in the sky and blackberries are readily available to be plucked from the bush and dolloped into your glass. However, with a few nifty substitutions, it can be transformed into a drink to match the Autumnal season, more on this below…
How we make a Bramble:
60ml Gin (GF recommends Napue Gin or Plymouth Gin)
30ml fresh lemon juice
15ml sugar syrup
15ml Crème de Mure
(Adapted from Diffordsguide Cocktails).
Add the gin, lemon and sugar syrup to a shaker. Shake well. Strain into an ice-filled rocks glass. Trickle the Crème de Mure over the top, creating the ‘bramble’ type effect. Garnish with freshly picked blackberries, or for a fruity, summer twist add a splash of Crème de Framboise.
An abridged, inebriated history:
The Bramble is the brainchild of Dick Bradsell, aka ‘The Cocktail King.’ The blackberry drink is arguably the most famous of his creations from his time at Fred’s Club Soho in the 1980’s, and is often compared to that of Jerry Thomas’ Gin Fix, swapping the latter’s raspberry syrup for blackberry liqueur.
The drink is said to take its name from the winding nature that the liqueur takes when it’s poured from the top to the bottom of the glass, as though it were dodging through brambles.
Try using lime instead of lemon juice for a slightly different, subtle touch. Another slight twist is to use Crème de Cassis instead of Crème de Mure and add a rosemary sprig as a garnish.
To make the drink more wintery, use Demerara sugar syrup that has been lightly infused with cinnamon. Trust us, it just works!
Bramble
Ingredients (5)
- 3/4 ounce freshly squeezed lemon juice
- 6 large blackberries
- Crushed ice
- 1 ounce crème de mûre
- 1 1/2 ounces dry gin, such as Plymouth
The Bramble is a gin-based cocktail that seems to have slipped off many bartenders’ radar, but it’s a must-drink when blackberries are in season.
What to buy: Make sure you use good-quality dry gin and crème de mûre—the lesser-quality versions will make it too harsh and cloying. Crème de mûre is a blackberry-flavored liqueur and can be found in specialty liquor stores or online. If you can’t find crème de mûre, you can substitute crème de cassis (black currant), but don’t tell any cocktail purists.

Blackberry Bramble Cocktail
Yes there are more than Gin and Tonic cocktails that are fabulous with Gin! Try this Blackberry Bramble; it’s a summer favorite.
It’s August and I’ve started to notice the entry of pumpkin items into the blogosphere. I’m reminded of a video of a mom (below) who had just dropped her child off for his first day of kindergarten and how she lamented, ‘No, he’s not ready!’ That would be me. I’m not ready. I will whine just as loudly and fight tooth and nail to hang on to summer for as long as I can. Our Spring starts late with snow potential until the middle of May so we lose a month of warmer weather the rest of the country gets…do not be trying to take this last hurrah of summer from me too!
So I offer to you this thoroughly summer cocktail made with one of my favorite fruits of the season. The Bramble cocktail is a gin-based drink that was invented by famed bartender Dick Bradsell at Fred’s Club in London’s Soho district in the 1980’s; it was reminiscent of the blackberries he used to get as a child on the Isle of Wight. It has apparently disappeared from the radar of many bartenders and home cocktail aficionados alike which is a shame because it’s a fabulous drink when blackberries are in season.
The herbaceous tones of the gin combined with tart lemon and blackberries, softened and sweetened a bit with simple syrup and Crème de Cassis is something you should really try. It’s not your mothers’ Gin and Tonic, that’s for sure!
Original recipes call for the blackberry flavored liqueur Crème de Mûre and cocktail purists would have my head for suggesting that the much easier to find Creme de Cassis (black currant) is suitable. Ignore them…heck, put it in a martini glass and REALLY ignore them. That being said, I would love to find some Crème de Mûre one day but was not interested in a day long excursion to myriad shops for this one ingredient. I decided to punt and the end result was wonderful!
I was lucky to have a bottle of Brockmans Gin on hand. From England, Brockmans Gin is made from 100% English grain, quadruple distilled and flavored with 10 botanicals and is unique from the more common London Dry Gin. It uses Bulgarian coriander, blueberries and blackberries to create an aromatic smooth taste that can be consumed neat or over ice if that’s your preference. Me? I prefer it mixed with something and the Brockmans, with its decidedly fruitier taste, was the perfect choice for this Blackberry Bramble.
I originally posted about this cocktail in 2013 and except for the photos little has changed. It continues to be a favorite of mine and the perfect summer libation. Who’s with me…still happy with all that is summer? Come on over; I’ll make us a whole pitcher of these to celebrate!
The Bramble Cocktail – Gin, Blackberry and Lemon
Preparation 5 min
Total Time 5 mins
Ingredients
- 3/4 ounce freshly squeezed lemon juice
- 6 large blackberries
- 1/2 ounce crème de cassis
- 1/2 ounce simple syrup (heat equal amounts sugar and water until sugar is melted; cool before using)
- 1 1/2 ounces Gin
- Blackberries for garnish
Instructions
- Combine the lemon juice and blackberries in a rocks glass and muddle until the berries are broken up. Fill the glass with ice.
- Combine Crème de Cassis, simple syrup and gin in a cocktail shaker and stir to combine.
- Add to the berry/lemon mixture, stir and garnish with additional blackberries.
Recipe Notes
Adjust simple syrup to your tastes; this cocktail was perfect for me but my neighbor enjoyed it a bit sweeter.
Really not a fan of gin but love blackberries? Just substitute vodka; it will have a bit less character from the botanicals that gin drinkers would miss but vodka lovers will welcome!

Yes please! Wishing it was 5 o’clock!
Love gin in cocktails! And this is a good one — hadn’t had it the first time I saw this, but I have since. Good stuff! My local wine/liquor store is really good about ordering ingredients they don’t normally stock. Takes a week or so to get them, but usually I’m in no rush.
How I would have loved to have been there on Monday to share a few (?) of these with you. I love the sound and the looks of this cocktail.
YEs, yes and yes! When Zoe was here we bought a bottle of lavender gin, though I can’t remember the name of it. She packed it in bubble wrap and took it with her! This has all the flavors I could want. Now I just need someone to drink it with!
Creative Culinary says
I keep asking you to come visit…do I need to make a pitcher of these?
This was THE hot cocktail of the the gay crowd in London in the 1980s. Yes I’m dating myself, but what a time it was! XOGREG
Creative Culinary says
Well, seems it’s good timing to bring it back right? I just loved it.
Gorgeous cocktail! And I’m not a gin fan, but I am digging the sound of the Brockman’s. =)
Creative Culinary says
I really enjoyed it Jenni…and if not a fan; this cocktail would be good as well with vodka!
Love the sound of this one, Barb!
Creative Culinary says
Thanks Liz…it’s a fabulous gin too; wonder if you can get it in Australia?
I guess I am coming over on Monday. The excuse is that I wanna meet you before I leave for my trip, but then we all know why I would be “actually” coming over :)) So refreshing! Hope you have a great weekend, Barb.
Creative Culinary says
Can you come over for reals? Or we could meet somewhere? I have to see you before you leave!!
Barbara, This Bramble looks so refreshing. I know precisely what I’ll do when I get my hands on some fresh blackberries. Have a fantastic Memorial Day weekend, and cheers!
Creative Culinary says
Thank you Brooks and refreshing it is and a great use of blackberries; they hold up well to the herbaceous nature of gin. Hoping you have a great weekend too!
Gosh even though I am dangerous, as in silly, when I have a sip or two, this Bramble Cocktail is calling my name. This looks so enticing!
Creative Culinary says
I am the same Shulie so if you want/need less of the liquor, just cut it back a bit or add some soda water to dilute the cocktail a little. This one was great; love summer cocktails with fruit!
Due to an unfortunate gin incident years ago I can no longer drink it, but I be this would be great with vodka too. I’ll have to give that a try. This looks wonderful.
Creative Culinary says
Hehe…we’ve all had those incidents and yes, I would make this with vodka in a minute!
Nice drink! I’ve heard of the Bramble but have never tasted it, much less made it. Love everything that’s in it (and I have everything on hand!) so I should definitely give this a try. Fun stuff. 🙂 Have a great Memorial Day weekend!
Creative Culinary says
You should definitely try it John. Gin is so seldom used in cocktails it seems but this one is perfect for it. Have a great holiday yourself!

Method: Fill glass with crushed ice, add gin, lemon juice and sugar syrup and stir. Top up with more crushed ice. Then lace drink with crème de mûre by slowly pouring over fresh ice. The mûre should make a pleasing 'bleeding' effect in the glass thus the drink should be served immediately with 2 short straws.

Bramble Cocktail Recipe – How to make a Bramble
Simple to make and well balanced in its sweet and sour tones the Bramble has become something of a modern classic now appearing on most bar menus in the UK. Essentially its a short “Gin Sour” with a drizzle of Creme de Mure, a French blackberry liqueur, over the top.
The recipes for a Bramble cocktail normally consist of the following ingredients:
Gin is definitely in high fashion, scores of Gin distilleries have been popping up across the UK in recent years. There are numerous gins on the market all with their own flavours and fascinating stories, which gin you use is up to your personal tastes however we are using something a little different, a little lighter; Loca Lab’s “Minus 33” – check out the blog post to find out more about this ‘juniper distilled spirit‘.
Freshly squeezed lemon juice, used to balance the sweetness of the sugar and berries in this cocktail.
A French blackberry liqueur. We use one from Joseph Cartron. Alternatively try making your own – keep an eye out for our next blog post on ‘How to make your own Blackberry liqueur’.
Crushed ice is important in this drink for chilling and dilution. At home, you can simply smash your cubes while wrapped in a clean dish towel, with a rolling pin or something heavy.
Blackberries and slice of lemon to garnish
If you’re lucky enough to have access to fresh blackberries then this recipe is a must!

The history of the Bramble
Invented in 1984 by Dick Bradsell at Fred’s Club in London Soho, it has become one of the UK’s favourite “unusual” cocktails. It’s well balanced, refreshing and easy to make.
Dick wanted to make a British take on the Singapore Sling, and was inspired by picking fresh blackberries on the Isle of Wight where he grew up.
Its rather memorable name is thought to have come from the winding nature the liqueur takes finding its way from the top to the bottom of the glass through the crushed ice, as if it were quite literally dodging through brambles.

Bramble Cocktail
Sweet, boozy with a citrusy twist, a refreshing classic Bramble cocktail is the best way to celebrate the warm season!
Happy weekend friends! Are you excited as I am about all these amazing sunny days? I cannot think of a better way to celebrate the beautiful season than sipping on a refreshing cocktail. So I thought it was just the right time to share with you one of my favorite spring drinks, the Bramble cocktail.
Invented in the mid-80s in London, the Bramble is a quintessential British cocktail. Created by Dick Bradsell whilst he was working at Fred’s Club in Soho, it quickly became a British favorite and for a good reason. It’s sweet, tangy and SO refreshing you’ll want to sip on this cocktail all spring and summer long.
The Bramble cocktail is quite simple to make and only requires a handful of ingredients: gin, crème de mûre ( a blackberry liqueur), sugar syrup, fresh lemon juice and fresh blackberries.I highly recommend to invest in a high-quality bottle of gin, it makes all the difference. When it comes to make a choice, Sipsmith London dry gin is hands down one of my favorite gins.
In 2009 Sipsmith became the first copper-pot based distillery to start up in London in 200 years. Hand-crafted in a small distillery in west London, the award-winning London Dry Gin is made with 10 world-selected botanicals, creating a one-of-kind smooth and pleasant gin.
Unlikely other gins, you almost don’t taste the alcohol in this London dry gin, instead it has a lovely junipery aroma and a zingy citrusy aftertaste, which makes it the perfect gin for the Bramble cocktail.Once you have all the right ingredients, the Bramble is super easy to make. All you have to do is place all ingredients into a shaker and stir them together. Pour the mix into a glass filled with ice and decorate with fresh blackberries and lemon slices.
If there is a spring-perfect boozy drink out there, then it must be the Bramble cocktail – Sweet with a lovely tangy aroma, it’s super refreshing and great to sip on sunny weekends!

I was reading this recipe thinking “Everything sounds amazing except for the gin!” Whilst I do drink alcohol, I find I can’t enjoy drinks if the alcohol is too strong and overpowering, but then I was happy to read that you hardly taste it. The colour is amazing, and these quintessential British flavours will definitely be making an appearance in my home this summer – can’t wait!
That purple is such a beautiful color! It looks and sounds very tasty!
There is something so refreshing and rustic about this recipe ! Such a pretty color as well. Can’t wait to try this
That sounds so refreshing! I love the idea of the citrus added in with the berries! I’ll have to find the creme de mure!
I had never heard of the Bramble before. I love the color and it looks so refreshing! Perfect for summer.
Love bramble recipes, and love going blackberry picking when they are in season. We have two big bushes on our allotment plot now which means we always get plenty. The cocktail has such a pretty colour.
