Coco Loco (Colombian Coconut Cocktail)

I have a killer summer cocktail for you today called “Coco Loco“! Coco Loco is a Colombian Coconut Cocktail, popular on the Caribbean coast of the country. Coco Loco literally translates to “Crazy Coconut“. This drink is usually sold by vendors around the beach who make them right in front of you while you wait.

They take a fresh coconut and make a hole in the top with a machete, and then prepare the delicious and fresh Coco Loco for you. They always serve this cocktail in fresh coconuts, the presentation is beautiful and the drink is absolutely amazing!

I didn’t have fresh coconuts today so, I served it in a totuma and mason jars, but if you can find fresh coconuts use them as a serving glass and your guests will love you for it.

There are different variations of Coco Loco throughout the country and every vendor has his or her own recipe for it, but its pretty much a cocktail made with rum, tequila, vodka, lime juice, coconut cream, coconut water and ice cubes.

I hope you enjoy making this Coco Loco cocktail. It is extremely refreshing for summertime parties or just sitting on the porch reading a magazine.

About 4 servings

Ice cubes as needed

1/4 cup rum or to your taste

1/4 cup vodka or to your taste

1/4 cup tequila or to your taste

2 cups coconut cream

1 cup coconut water

Juice of 3 limes

Lime slices to serve

Directions

  1. Place all the ingredients, except the ice and lime slices, in a blender, and blend for a few seconds, or until smooth.
  2. Pour into a glass or a fresh coconut. Garnish with a lime slice and serve immediately.

Couldn’t get enough of these in Islas del Rosario and playa Blanca.

I had a “coco fresa” in San Andrés on Johnny Key (basically same thing, only with a kick of strawberry) and asked the vendor how to make it– of course her lips were sealed. Here’s to hoping I can work with this recipe as a guide to get at least close to the best cocktail I’ve had in my life!

Thai Coco Cocktail

Ingredients

  • 2 1/2 ounces coconut rum
  • 1 1/2 ounces Fresh Lemongrass Syrup, recipe follows
  • 1 ounce freshly squeezed lime juice (about 1 juicy lime)
  • Very thin slice lime or spear of fresh lemongrass, for garnish
Fresh Lemongrass Syrup:
  • 2 stalks fresh lemongrass, coarsely chopped
  • 2 cups water
  • 1 cup sugar

Directions

Fill a cocktail shaker or small pitcher with ice. Add the rum, lemongrass syrup, and lime juice. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Strain into a chilled cocktail glass. Garnish with lime on the rim or the lemongrass spear in the drink. Serve.

Fresh Lemongrass Syrup:

Place the lemongrass, water, and sugar into a saucepan and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to a week.

Coco Colada: The Pina Colada Served as a Mocktail

A Coco Colada (or virgin Pina Colada) is a non-alcoholic version of the Frozen Piña Colada. This refreshing, blended mocktail is perfect for summer afternoons.

There is so much to love about the Coco Colada! It has that tropical fruit combination of pineapple and coconut and it is very easy to blend up. Best of all, it's a drink the entire family can enjoy.

Of course, you could always toss a non-alcoholic Piña Colada mix in a blender with ice if you like. However, I think that one of these made-from-scratch recipes produce a much tastier drink!

What You'll Need

  • 4 ounces pineapple juice
  • 2 ounces
  • cream of coconut
  • 1 cup
  • ice
  • Orange slice for garnish

How to Make It

  1. Add ice, pineapple juice and cream of coconut to a blender
  2. Blend until slushy.
  3. Pour into a chilled hurricane glass.
  4. Garnish with an orange slice.

Shake It Up

Just like the Piña Colada , you can skip the blender and shake your Coco Colada. The coconut cream will give it that great creamy texture and the pineapple juice in the recipe above should be more than enough. Serve it over ice and, if you like, top it with a little cream soda or ginger ale.

Coco Colada Smoothie with Fresh Coconut and Pineapple

If you have the desire to make a really fresh Coco Colada, try this smoothie recipe!

You will need to find a young Thai coconut and open it using this tutorial. The surprise inside is fresh coconut water and the sweet, white flesh and both of these elements can be used to create a fresh drink for two.

Note: If you do not have a fresh coconut, substitute about 2 ounces of coconut cream and add more if needed.

Tips for Blending Your Colada

The beauty of using the blender to create drinks and smoothies is that you can make adjustments as you go. If you have blended it and it's not quite the consistency you were hoping, here's how to get it perfect.

  • The Mix is Too Thin: If your colada is too thin and watery, you need to add more solids. This could be chunks of fruit or ice.
  • The Mix is Too Thick: For drinks that are too thick in the blender, add a small amount of liquid. Choose between your pineapple juice, coconut cream or water.
  • To Create a Creamier Colada: You may want less of a slushy and more of a creamy smoothie. In this case, ice cream, milk (plain or coconut) or more cream of coconut should do the trick.

Ways to Enhance Your Coco Colada

The tropical taste of the Coco Colada is a fantastic base for taking the drink as far as your imagination can take you.

Here are a few ideas to get you started.

  • Add more fruit to the blender. Banana, mango and strawberry are among the best options for the coconut-pineapple mix.
  • Make it a Toasted Coco Colada. Add about 1 tablespoon of caramel syrup to the blender and garnish with toasted coconut.
  • Add chocolate ice cream or syrup. Coconut, pineapple and chocolate, it's a tough combination to resist! Add a scoop of chocolate ice cream to the blender and skip the ice. Or, keep the ice and squirt some chocolate syrup into the blender.

Coconut Water Cocktails

A coconut-water infused cocktail is the perfect way to cool down on a hot summer night—plus it’s packed with potassium, a healthy alternative to coconut milk or Crème de Coconut. Bartenders are putting a new twist on a favorite tropical flavor with these beach-inspired drinks:

2 ounces VeeV Açai Spirit

2 ounces Vita Coco coconut water

1 ounce passion fruit purée

1 orange slice, for garnish

Combine VeeV, coconut water and passion fruit pure, shake with ice and strain into martini glass. Garnish with orange slice.

The Governor’s Punch

2 ounces coconut water

1 ounce Governor’s Reserve Coconut Rum

½ Cayman lime, freshly squeezed

1 drizzle of brown sugar simple syrup (or a dash of dark brown sugar)

1 coconut shell (optional, for serving)

Combine all ingredients in a shaker and serve in a coconut shell (optional).

Coconut Flower Martini

2 ounces St-Germain elderflower liqueur

3 ounces coconut water

Edible orchid for garnish

Mix St-Germain and coconut water. Serve in a martini glass garnished with an edible orchid.

Saké Cocktail

5 ounces of saké

Fresh lime juice

1 teaspoon of agave nectar

2 ounces coconut water

Combine ingredients, shake well, strain and serve in a pint glass filled with ice.

Non-Alcoholic Xcalacoco Welcoming Drink

1 peeled fresh coconut

1/3 ounce lemongrass

1 tablespoon sugar

Boil the coconut and the lemongrass with 1 cup of water. Once it has completely boiled, add remainder of water and sugar. Strain the liquid and cool in the freezer before serving.

Brown Nut Monkey Head

2 ounces Cruzan Coconut Rum

6 ounces coconut water

½ ounce fresh-squeezed lime juice

Pour coconut rum over ice in a tumbler glass. Top with fresh coconut water and lime juice to taste. Stir and serve.

Coconut Colada

2 ounces Cîroc Coconut Vodka

2 ounces coconut water

2 ounces Coco Lopéz Coconut milk

Fresh coconut, with top cut off

Combine vodka, coconut water and coconut milk, and serve in fresh coconut with umbrella and cherry as garnish.

Coco Cadushy Cactus Cocktail

2 ounces Cadushy of Bonaire Liqueur

1 ounce white rum

2½ ounces coconut water

2½ ounces pineapple juice

2½ ounce ice cubes

Squirt Blue Curaçao

2–3 drops fresh-squeezed lemon juice

Pour all spirits into an ice-filled cocktail shaker. Add pineapple juice, coconut water and squirt of Blue Curaçao to color it green. Shake and strain into a cold cocktail glass. Add a few drops of fresh lime juice and garnish with a slice of lime.

Pink Bazooka

1 layer of watermelon juice (juice watermelon in juicer, then let sit for five minutes before removing the top layer of pectin foam) ½ ounce simple syrup

½ ounce lime juice

2 Thai basil leaves

1 coconut water ice cube (made by freezing coconut water in ice cube tray)

In a martini glass, add coconut water and ice cube. Fill shaker with plain ice and add the first four ingredients. Shake vigorously. Then pour into a martini glass. Garnish with Thai basil leaf.

Ingredients

  • 12 mint leaves
  • 1/2 ounce fresh lime juice
  • 2 ounces coconut rum
  • 1/2 ounce Simple Syrup
  • 1 ounce cream of coconut from a well-shaken can
  • Ice
  • 1 to 2 ounces chilled club soda

How to Make It

In a cocktail shaker, muddle the mint with the lime juice. Add the rum, Simple Syrup, cream of coconut and ice and shake vigorously. Strain into an ice-filled highball glass and top with the club soda.
