A Hawaiian classic from the 1970s, the Chi Chi is like disco in a glass: an indulgent, summery, party-perfect blend of vodka, pineapple and creamy coconut.

Smirnoff No. 21® Vodka
Smirnoff No. 21® Vodka
A vodka that's known around the world, Smirnoff is born of a long history of charcoal filtration to give smooth mouth feel and a pure, clean flavour.
How to make
Fill a blender with a handful of crushed ice.
Using a jigger, measure 50ml Smirnoff No. 21 vodka, 25ml cream of coconut and 100ml pineapple juice into the blender.
Blend until the mixture is smooth.
Pour the liquid into a Hurricane glass.
Using a knife and chopping board, cut a pineapple wedge and secure to the rim of the glass.
Avoid top-ups
It’s easier to keep track of your drinks if you know how many full glasses you’re drinking.

- 4 ounces pineapple juice
- 2 ounces cream of coconut
- 1 teaspoon confectioners' sugar (or more)
- 1 cup crushed ice
- 2 slices pineapple, speared with
- 2 maraschino cherries, on toothpicks, for garnish
Directions
- Into a blender, combine the vodka, pineapple juice, cream of coconut, sugar, and ice. Blend on high speed until frothy and well combined, about 30 seconds.
- Pour into 2 chilled Collins glasses, and garnish with the pineapple slices and umbrellas.
- Serve immediately.

A pineapple and coconut delight for hot days, the Chi-Chi is a wonderful tropical cocktail that is something a little different than the average Margarita and Daiquiri. The blue color comes from the curacao and the flavor is very similar to a Pina Colada. Think of it as the blue, vodka version!
Also, I tried this with one of the new coconut vodkas as suggested by a reader and it is fantastic. There are many more possibilities for flavored vodkas as well. I might try raspberry, citrus or one of the whipped cream vodkas.
What You'll Need
- 1/2 cup ice
- 2 ounces
- vodka or coconut vodka
- 1/2 ounce
- blue curaçao
- 1/2 ounce
- cream of coconut
- 1/2 cup fresh
- pineapple
- One scoop of
- vanilla ice cream
- Pineapple slice for garnish
How to Make It
- Pour all ingredients into a blender.
- Blend until smooth.
- Pour into a chilled margarita or highball glass.
- Garnish with the pineapple.
If the mix turns out too thick add juice; too thin, add ice or ice cream.

Chi Chi Cocktail
Get it started with Hawaii’s Chi Chi cocktail.
- 1 measure coconut cream (made with TIANA Fair Trade Organic Raw Coconut Goodness)
- 2 measures vodka
- 4 measures pineapple juice
- 6 ice cubes, crushed
- To decorate
- Pineapple slice and cocktail cherry
To prepare the coconut cream simply warm TIANA Fair Trade Organic Raw Coconut Goodness by standing it in hot water for up to 10 minutes. Once the content becomes a thick semi liquid then stir thoroughly. Dilute it using 1 part of TIANA Fair Trade Organic Raw Coconut Goodness with 2 parts of water and chill.
Put the vodka, coconut cream (made with TIANA Fair Trade Organic Raw Coconut Goodness), pineapple juice and crushed ice in a blender and process until smooth. Pour into a tall glass and decorate with a slice of pineapple and a cherry.

Utensils Needed: Highball glass or margarita, a blender
Preparation Time: 5 minutes
– 1 – 2 cup of crushed ice
– 2 ounces of good quality vodka
– 1 / 2 ounce of blue curacao
– 1 / 2 ounce of coconut cream
– 1 / 2 cup of fresh or canned pineapple
– One scoop of vanilla ice cream
– A chunk of pineapple for garnishing purpose

Take a blender and pour 1/2 cup of crushed ice in it along with two ounces of vodka, half ounce of blue curacao, half ounce of coconut cream, half cup of fresh or canned pineapple and a scoop of vanilla ice cream.
Turn on the blender for a less than a minute to mix all of the ingredients thoroughly. Make sure they're all well settled!
Take a highball glass or margarita and pour the mixture from the blender into the glass.
